There are so many great recipes from years back that need to be reposted – like this Corn and Sausage Chowder! This recipe is so easy, it could easily become a go-to favorite. The sausage adds tons of flavor. This Corn and Sausage Chowder is filling, comforting and perfect for a chilly night!

I know it is feeling like spring here, but I’m one who loves to eat soup year round. Especially in the late summer/early fall – when all of the garden produce is really good. And even though this is more of a cold weather soup, I know that even though the weather here has been nice, we still have a few chilly days in store that this would be perfect for!
I wasn’t going to post about this Corn and Sausage Chowder, but the way my husband ate this up – I knew I had to share!! My husband isn’t the biggest potato fan, so I actually was worried that he wouldn’t like this one because it has potatoes. But I believe we had the whole batch of this eaten up within 24 hours!!

Corn and Sausage Chowder
Ingredients
- 1 pound sweet Italian sausage casings removed, if needed
- 1 medium onion chopped
- 1 1/2 pounds potatoes peeled and cut into 1/2-inch cubes
- 2 cups chicken broth
- 1 teaspoon salt
- 1/8 teaspoon pepper
- 1 (15.25 oz) can whole kernel corn, drained
- 1 (14.75 oz) can cream-style corn
- 1 (12 oz) can evaporated milk
- Chopped chives
Instructions
- In a large Dutch oven over medium-high heat, cook the sausage and the onion until the sausage is browned and the onions are tender. Drain well.
- Stir in the potatoes, chicken broth, salt and pepper. Bring to a boil, then cover the pot and reduce the heat. Simmer for 10-15 minutes, or until the potatoes are tender.
- Stir in the whole kernel corn, cream-style corn and evaporated milk. Cook until warmed through.
- Top with chopped chives to serve.

Tried this recipe w/ changes. First suggest starring w/ trilogy: Carrots, celery & onion; red bell peppers too.
Then ading thyme or marjoram for seasoning, and a dash of hot sauce, Iike Chalupa. Near the end I subbed plain soy milk (dairy allergy) but could use cashew or almond so also mix 1 or 2 Tbls cornstarch or flour as thickener. Added dried chives cuz I didn’t have fresh so cooked in the last 5-10 minutes. I live in a coastal area that can get foggy at nite even in summer so glad that others share my love of soups, stews, & chowder.
When available I would use salmon or crab in place of the sausage & sub clam juice for ckn broth.

Delicious and simple! I had some kale in the fridge, so I threw that in too- definitely didn’t go astray! Forgot to leave the corn and milk till last, but it still came out great. This one’s a keeper!

I love corn chowder, a little too much. That is why I only make it when corn is in season, other wise I would have to grow a third thigh just to hold all the calories. 😉

I love the photo! And I love this chowder! My hubby is a big fan of corn chowder, and I just know he’d gobble this up! The weather here is still bizarre, so this is perfect. Plus, unlike many chowders, this one is gluten free! Yeah! So glad you posted this! YUM!
