Because every once in awhile, you have one of those days that you are just pulled in every direction and don’t have time to be in the kitchen.
Or you’re exhausted after a long day and spending lots of time on your feet is the last thing you want to do.
I’m here to save dinner for you on those nights. Because this dinner takes a whole 20 minutes to make.
Yep, 20 minutes.
And I even give you a few tips below to make them even faster at dinner time!
We’ve been enjoying this recipe for almost a decade now. It’s good, it’s fast, it’s filling. You can’t ask for much more!
What is Suizas Style?
Have you ever had Enchiladas Suizas? I have many times – they are one of my favorites! (I can’t believe I don’t have a recipe here!) I have always just known that they were enchiladas with a creamy green sauce. Well, as it turns out, there is more to them than that!
Suiza actually stands for Swiss style. Enchilada Suizas came about when the Swiss immigrants came to Mexico. They brought with them their love of milk, and started dairies producing cream and cheese.
Here is where you get food fusion at its finest – Mexican enchiladas, topped with a cream based sauce.
Tips for Making These Pulled Chicken Sandwiches
This is one of my favorite fast dinner ideas. Here are a few tips to make this even faster if you only have a few moments to pull dinner together.
- Shred the chicken ahead of time. I like to either buy a rotisserie chicken earlier and shred it and refrigerate the chicken, or make my own shredded chicken. I like to always have some of this on hand, either in the fridge or in the freezer. It freezes really well and defrosts easily as well.
- If you have a few extra minutes earlier in the day, you can chop your onion and garlic and grate your cheese. These things only take a few minutes, but it makes things easier if you have it all done earlier and you can just throw it all together!
- You can actually make the chicken and sauce in advance then just heat it up before you are ready to eat. Just be careful heating it up to not heat it too hot because of the sour cream.
- You can use a homemade tomatillo salsa (make it ahead of time!) or store bought. But no matter what you do, make sure it’s a salsa that you like, because the flavor is pretty prominent.

Suizas Style Pulled Chicken Sandwiches
Ingredients
- 1 tablespoon extra virgin olive oil
- 1 small red onion chopped
- 2 cloves garlic minced
- Juice of 1 lime
- 1 tablespoon honey
- 1 1/2 cups tomatillo salsa or salsa verde
- 1/2 cup sour cream
- 1 rotisserie-style chicken skin discarded and meat shredded (about 4 cups of shredded chicken)
- 4 buns
- 1 cup shredded Monterey Jack cheese
Instructions
- Preheat the broiler.
- Heat the olive oil in a large skillet over medium-high heat. Add the onion and cook until softened, about 2 minutes, then stir in the garlic for about 30 seconds.
- Stir in the lime juice, honey, and salsa; stir and heat through. Stir in the sour cream.
- Add the chicken and stir to coat.
- Place the bun bottoms on a baking sheet and top each with an equal amount of the chicken mixture. Top with the cheese. Place the bun tops on the baking sheet, cut side up.
- Broil just until the cheese melts and the bun is toasted, a minute or two.
- Set the roll tops on the sandwiches to serve.
