Filled with cheese and lots of Italian meats, skip the sandwich shop and make this Italian Sub recipe at home! This is the perfect sandwich for and easy dinner at home.

We have entered the time of year when I have only minutes to prepare dinner several times of the week because we are busy running kids here and there. So now, more than ever, I’m stocking my menu with fast and easy dinners.
This Italian Sub recipe is one of those recipes. We love a good sandwich at our house, and it’s even better when it’s loaded up with lots of cheese, Italian meats, and vegetables.
This is definitely a sandwich my whole family will devour!
Ingredients
- Mayonnaise: You can use regular mayonnaise or you can use low fat.
- Red Wine Vinegar: Red wine vinegar will be a more traditional choice, but feel free to swap in another vinegar. I think balsamic would also be delicious.
- Italian Seasoning: You could also use a mixture of oregano and basil.
- Salt and Pepper: Make sure to season both the mayonnaise and the oil and vinegar with salt and pepper to taste.
- Olive Oil: I used extra virgin olive oil. You will want to make sure you use an olive oil that you like as the flavor will come through.
- Parmesan: Make sure this is finely grated so that it incorporates into the mixture.
- Sub Rolls: You can use regular sub rolls or an Italian loaf – whatever you prefer!
- Cheese: I used provolone as it is fairly common for an Italian sub.
- Meats: This is when you can get creative and use your favorite Italian meats. I used a mixture of pepperoni, salami, ham, capicola, and mortadella. You will want enough meat to add between 1/4 and 1/3 pound of meat per sandwich.
- Vegetables: I kept this fairly simple, with shredded lettuce, sliced tomatoes, onions, and pepperoncini peppers. You could also use banana peppers.
How to Make an Italian Sub
STEP 1: Make the mayonnaise mixture by combining the mayonnaise, some of the vinegar, some of the Italian seasoning, and then salt and pepper.
STEP 2: Then make the oil and vinegar mixture by whisking the oil, vinegar, seasoning, parmesan, salt, and pepper.
STEP 3: Start assembling your sandwich by spreading the mayonnaise on both sides of your sub roll. Top with cheese, then the meats.
STEP 4: Add your vegetables on top of the meats.
STEP 5: Finish the sandwich off by drizzling some of the oil and vinegar mixture over the top. then fold the sandwich in half and serve!
Tips and Tricks
If possible, get your meats and cheese sliced at the deli in the grocery store so that you can get them cut thin. I had the deli cut all of mine except the ham and the cheese, and I definitely would have liked a thinner cut on those.
The superstore near me did not have a great selection of meat at their deli counter. I had to go to another grocery store (a Kroger) to find a good selection of Italian meats.
While assembling the sandwich, I like to layer the cheese on both sides, then add an equal amount of meat on each side. Then place the vegetables on top, so that when you fold the sandwich halves on each other, the vegetables are in the middle. I find that the sandwich stays together better that way.

Italian Sub
Ingredients
- 1/2 cup mayonnaise
- 3 tablespoons red wine vinegar divided
- 2 teaspoons Italian seasoning divided
- Salt and pepper
- 1/4 cup extra virgin olive oil
- 1 tablespoon parmesan cheese
- 4 sub rolls
- 8 oz sliced provolone cheese
- 1/4 lb deli sliced pepperoni
- 1/4 lb deli sliced salami
- 1/4 lb deli sliced ham
- 1/4 lb deli sliced capicola
- 1/4 lb deli sliced mortadella
- 1/2 cup sliced onion
- 1-2 tomatoes sliced
- 3 cups shredded lettuce
- Banana peppers or peperoncini
Instructions
- In a small bowl, combine the mayonnaise, 1 tablespoon of the red wine vinegar, and 1 teaspoon of the Italian seasoning. Season to taste with salt and pepper. Set aside.
- In another bowl, whisk together the olive oil, the remaining 2 tablespoons of vinegar, the parmesan, and the remaining 1 teaspoon of Italian seasoning. Season to taste with salted pepper.
- Cut the sub rolls in half. Divide the mayonnaise mixture evenly between the sandwiches, spreading some on each half of the roll.
- Top the bread with even amounts of the cheese, then even amounts of all of the meats. (I like to place even amounts of cheese and meats on each side of the sandwich, so that the vegetables are in the center.)
- Add the onions, tomatoes, peppers, and lettuce to the sandwiches. Drizzle the olive oil mixture over the lettuce.
- Fold the sandwiches in half. If desired, cut the sandwiches in half and serve.
