A coconut version of a cake ball, these Coconut Cake Truffles are the perfect treat for coconut lovers. Simple enough for anyone to make, and packed with coconut flavor.
Let me just start off by saying what an awesome family I have. Yes – I’m going to take a moment to brag. We blessed Easton at our church yesterday, and I’m so lucky to have so much amazing family that came to support us. And even more, we all went back to my house after church for lunch, and even though I originally planned to supply most of the lunch, they all pitched in and we had a delicious lunch. I love spending time with my family, and I’m so grateful that we all live so close together.
One of my contributions to the meal were these cake truffles. I spotted these truffles online a couple of weeks ago, and I haven’t been able to get them out of my mind since. I love cake balls as much as anyone else out there, but I think it’s more of a novelty – because they are just so sweet that I can barely get through one. What I was drawn to with these, though, is that they don’t use frosting as the binder like most cake balls do. They use coconut milk and a little sweetened condensed milk – which totally cuts back on the sweetness. I loved these so much more than the typical cake balls, which was actually quite dangerous because I ended up eating about a hundred of these. Which I guess proves that I loved them!!

Ingredients
- 1 white cake baked in a 9×13 pan, cooled
- 3/4 cup coconut milk from a can
- 1/4 cup sweetened condensed milk
- 1 cup sweetened coconut
- candy melts or white chocolate
Instructions
- Cover a large baking sheet with parchment paper or waxed paper. Set aside.
- In a large bowl, crumble the baked cake. Add in the coconut milk, sweetened condensed milk and coconut. Using your hands, combine all the ingredients. Form the mixture into balls and place on the prepared baking sheet. Refrigerate for at least 1 hour.
- Melt the candy melts or white chocolate. Dip the balls in the coating and return to the tray to harden. Refrigerate until ready to serve. (These taste best after being refrigerated overnight!)

Do you think these would ship well? Usps 2 day priority shipping. Would it be best to make the night before and refrigerate overnight or make that morning and refrigerate for a couple/few hours? And hkw about white morsels instead of white chocolate? I’m looking for a coconut dessert for a birthday.

I haven’t personally shipped these, but I’m guessing they would be just fine! Sometimes I can get the white morsels to work, but sometimes it’s hard to melt them down smoothly. You might need to add a touch of shortening or coconut oil to smooth it out.

These tasted like vanilla cake balls to me and everyone else – I changed it up and it was much better when I made the cake coconut flavored……… When making the cake use coconut milk instead of water, add a box of coconut cream pudding mix AND add 1 1/2 tsp coconut extract. Then follow the rest of the recipe as printed to make the cake balls. These actually taste like coconut and were a HIT!!!

How do you think it would taste with a dark chocolate cake mix, covered in chocolate or should I use white chocolate for the coating?

I think they would be great with a chocolate cake mix! And I don’t think you’d go wrong with either chocolate or white chocolate for the coating.

@kelly, I’m not sure if they would freeze well. I would guess that the coating would weep once they were thawed out. But I haven’t tried!

I have always wated to make those cake balls and even wanted tobuy a book but then like you I have read they are way to sweet and aslo we don’t get candy melts , and I like that you have written we can use white chocolate so I amsure gonna try this one. I was looking thorugh a cup cake book last weekend and my daughter was remarking you know mom cake balls are now hipp not cupcakes. So i am gonna make this one day and show her i am hipp in baking too 🙂
