A super easy Halloween treat idea – this Halloween Popcorn Cake is popcorn coated with marshmallows, and mixed in with all kinds of Halloween candy!

Yesterday, I talked about food in regards to childhood memories. I’m adding one more thing onto my list of things that make me think of my childhood – this popcorn cake. I remember my mom making these cakes – and although it could be made year round (just change out the mix-ins) I always associate it with Halloween. Because my mom would add candy corn, and this is the time of year that candy is on the shelves!
You really can’t get much easier than this recipe. Kind of like a rice krispie treat, but made with popcorn instead of cereal. And you can add in whatever your heart desires. So this could really be a fun one to make with the kids, especially once Halloween is over and you are wondering what to do with all that leftover Halloween candy. But beware – because this cake is quite addictive. You won’t be able to stop at just one slice!!
Ingredients
Popcorn: I prefer air-popped popcorn for this recipe, but microwave popcorn will work, as well.
Marshmallows: Mini marshmallows will melt the most evenly.
Butter: I like to use unsalted but salted is fine in this recipe.
Mix-ins: You can get creative here! I used holiday m&ms, candy corn, and peanuts.
Tips for Making a Halloween Popcorn Cake
- You want to make sure you butter the bundt pan well so that the cake doesn’t stick. You could also use a tube pan.
- If you are using microwave popcorn, make sure and get one that is not buttered.
- You can also form this into popcorn balls instead of shaping it into the popcorn cake!
- Store any leftovers in an airtight container.

Halloween Popcorn Cake
Ingredients
- 2 1/2 quarts of popped popcorn about 1/3 cup of seeds if popping your own
- 1 10.5 oz bag mini marshmallows
- 3 tablespoons butter
- Assorted mix-ins m&ms, peanuts, candy corn, etc
Instructions
- Butter a bundt pan well. Set aside.
- Place the popped popcorn into a large bowl.
- In a saucepan (or you can do this in a microwave safe bowl in the microwave), melt the butter and marshmallows together. Pour the marshmallow mixture over the popcorn and slightly.
- Add the mix-ins and stir until the mix-ins are evenly distributed and the popcorn is coated with the marshmallow mixture.
- Pour the popcorn into the bundt pan and press down slightly. Let it cool for about an hour, then turn the cake out onto a serving dish.

I’m about to make this into popcorn balls. I’m going to add salted peanuts, crushed pretzels, and Christmas colored smarties!!! Maybe also some red, white, and green sprinkles for even more color!!! I originally set out to make rice krispie squares, but diverted to the popcorn idea!
