I’ve been struggling with dinner a lot lately too! Why don’t I have shredded chicken in the freezer? There was a time where I stocked up my freezer with bags of portioned shredded chicken and seasoned ground beef & turkey and my life was so much easier. I have to start doing that again.

@Lisa, If I have leftover chicken, I usually shred it then place it in a ziplock bag – usually in a portion size that I would use for one recipe for my family. (and make sure to label!!) Then I just freeze it like that. To thaw, I just stick it in the fridge the night before, or if I forget, that morning, and it’s usually thawed.
