I often hear from people who never cook fish at home that they are intimidated by cooking fish. I will tell you this, though – in my humble opinion, cooking fish is way easier than cooking chicken. And not only is it easier, but it’s way faster. So if you are someone that is intimidated by cooking fish at home, you must give this Soy Ginger Salmon a try. You will be amazed at just how easy it is!
I originally posted this recipe June of 2007. In a lot of ways, my cooking habits and eating habits have changed. But in other ways, they have stayed the same. This Soy Ginger Salmon is one instance where everything has stayed just the same. Since the day I made this salmon recipe back in 2007, I fell in love. And this still stands as probably my favorite salmon recipe to date.
One thing that has remained the same all these years is my love for simple recipes. And it really doesn’t get any simpler than this one. A few ingredients. Some time to marinate in the fridge. And then a quick broil. That’s really all it takes.
Ingredients
- Salmon: You can either us pre-cut pieces, or you can buy a big filet and cut it into pieces.
- Brown Sugar: The brown sugar not only gives the fish some sweetness, but it helps it to caramelize beautifully, as well.
- Lemon Pepper & Garlic Powder: These are both for flavoring.
- Soy Sauce: The soy sauce is the predominant flavor – I use low sodium so that it’s not too salty.
- Olive Oil: This goes into the marinade. If you don’t like olive oil, you could substitute another oil that you do like,
- Ginger: Fresh ginger works best. You can use ginger powder if that is all you have, but you’ll get the best flavor with fresh.
- Orange Juice: The orange juice gives the marinade tons of flavor, as well. I like to use an orange juice that is not from concentrate.
How to Make Soy Ginger Salmon
- Start rubbing each salmon filet with some of the brown sugar, then sprinkle with some of the lemon pepper and the garlic powder. Rub this all into the fish.
- Make the marinade by combining the soy sauce, the oil, and the remaining brown sugar, lemon pepper, and garlic powder. Stir in the ginger, then cook the mixture over medium heat until the sugar has dissolved. Remove the mixture from the heat and stir in the orange juice.
- Combine the fish and the marinade in a large ziplock bag, then refrigerate for at least 4 hours. I think overnight is best!
- When you are ready to cook the fish, line a baking sheet with foil and place the fish on the baking sheet. Don’t discard the marinade.
- Broil the fish for 2 minutes, then baste it with the remaining marinade. Gently turn the fish over and broil just until the fish flakes easily, about 4 more minutes.
- Remove the fish from the oven and let it sit for 5 minutes before serving.

Soy Ginger Salmon
Ingredients
- 1 lb salmon filets
- 1/3 cup brown sugar divided
- 2 teaspoons lemon pepper divided
- 1 teaspoon garlic powder divided
- 1/3 cup low sodium soy sauce
- 1 tablespoon olive oil
- 1 1- inch piece fresh ginger minced
- 1/3 cup orange juice
Instructions
- Rub the salmon with 1 tablespoon of the brown sugar. Sprinkle with 1 teaspoon of the lemon pepper and 1/2 teaspoon of the garlic powder. Rub the seasoning into the fish.
- Combine the soy sauce and olive oil in a small saucepan. Stir in the remaining brown sugar, lemon pepper and garlic powder, as well as the ginger. Place over medium heat and bring to a simmer. Let the mixture simmer until the sugar has dissolved. Remove from the heat and stir in the orange juice.
- Place the fish and the marinade in a large ziplock bag. Refrigerate overnight, or at least 4 hours.
- Line a baking sheet with foil. Preheat the broiler. Place the fish on the baking sheet, reserving the marinade.
- Broil the fish for 2 minutes, then baste with the reserved marinade, then broil for 2 additional minutes. Turn the fish over and broil until the fish flakes easily, about 4 more minutes. Watch the salmon carefully while broiling, as the marinade on the baking sheet can start to smoke because of the sugar.
- Remove the fish from the oven and allow to sit for 5 minutes before serving.

I tried this tonight and it was great. I substituted lemon juice and fresh ground black pepper for the lemon pepper. I also used more garlic and more sesame. Everyone including my kids loved it.
