I love ice cream. And I actually love to make ice cream. But the truth is – I rarely do because I can never remember to put the freezer bowl in the freezer. You have to prepare ahead of time, and let’s face it – I’m not all that good at being prepared ahead of time. Like with Vanilla Ice Cream. Delicious? You bet! But you have to plan ahead of time.
Enter the no ice cream machine needed ice cream.
I know, I know – I’m kind of late to the party. This isn’t a new idea by any means, but it was new to me, so that’s my story. But really- only 5 ingredients. And it only takes 10 minutes to throw together before it goes to the freezer. Does it get any better than that??
I’ll admit – I was a little bit skeptic. How is ice cream supposed to be creamy when it’s not churned? Well, this totally proved that theory wrong. This is creamy and smooth and has the perfect pumpkin and spice flavoring. Add in the toffee pieces (is it just me that thinks that toffee and pumpkin were made to be together?) and you have an ice cream that you’ll want to keep your freezer stuffed with at all times. Pure indulgence.
So if you don’t have an ice cream maker (and even if you do!!) this creation is for you!
Ingredients
- Cream: You need to use heavy whipping cream. You need to be able to whip the cream to soft peaks, so milk or even half and half won’t work.
- Sweetened Condensed Milk: Make sure you are using sweetened condensed milk, not evaporated milk.
- Toffee Pieces: You can usually find these in the baking aisle. I used the ones without chocolate coating. You can also leave these out and just make a regular pumpkin ice cream!
- Pumpkin Puree: This is pumpkin puree, not pumpkin pie mix. If you are using homemade pumpkin puree, you’ll want to drain it first so it doesn’t have too much liquid.
- Pumpkin Pie Spice: I like to use my homemade pumpkin pie spice, but store bought will also work.
How to Make Pumpkin Ice Cream
- Beat the cream to stiff peaks.
- In another bowl, combine the sweetened condensed milk, pumpkin puree, toffee pieces, and pumpkin pie spice.
- Fold the cream into the pumpkin mixture.
- Transfer the mixture to the freezer and freeze completely. This will take at least 4-6 hours.

Pumpkin Ice Cream with Toffee
Ingredients
- 2 cups heavy cream
- 14 oz can sweetened condensed milk
- 3/4 cup toffee pieces
- 1/2 cup pumpkin puree
- 1/2 teaspoon pumpkin pie spice
Instructions
- Beat the whipped cream to stiff peaks in a large bowl.
- In another large bowl, combine the sweetened condensed milk, toffee pieces, pumpkin puree and pumpkin pie spice.
- Fold in the cream.
- Transfer to a covered container and freeze until the mixture has hardened, at least 6 hours.

I have made this several times and it has been a huge hit! Love it. I was wondering if it could be modified using fresh blueberries to make blueberry ice cream…any suggestions?

I would definitely think you could do blueberries! I would do the cream and the sweetened condensed milk the same, then mix in blueberries. I think a touch of cinnamon would be a great addition, too!!

Pumpkin and toffee together are one great combo, but then mixed into an easy 10 minute ice cream? Wow oh wow, that is a real winner of a recipe! Now if we were not in the middle of a snow storm and I was not freezing I would totally be making this ASAP, but I think I have to wait till things warm up a bit!
