Get your s’mores fix for breakfast! These S’mores Pancakes give you all of your favorite s’mores flavors with graham cracker pancakes that are topped with an easy homemade chocolate sauce and marshmallow sauce.

I know I’m not the only one who always wants to try all of the “fancy” pancakes when you go out for breakfast. Especially when you are at a pancake house, where they have lots of fun pancakes.
Well, don’t wait until you go out – you can make those fun pancakes at home.
Starting with these S’mores Pancakes!
I will admit that these are a little bit over the top, walking the line between breakfast and dessert, like these s’mores muffins. But no matter when you serve them, you’ll be in love.
Graham cracker pancakes are topped with chocolate sauce and marshmallow sauce. These really are for s’mores lovers!
Ingredients
- Cocoa Powder: You’ll use unsweetened cocoa powder.
- Sugar: You need sugar in the chocolate sauce as well as in the pancakes.
- Salt: I like to use fine sea salt, but table salt works, as well.
- Flour: You’ll want to use all-purpose flour.
- Graham Cracker Crumbs: I make my crumbs by processing the full crackers in a food processor. You could also use a blender. You can also sometimes find boxes of graham cracker crumbs at the grocery store, but I find it’s easiest just to make my own.
- Baking Powder: This will give the pancakes their lift.
- Milk: I usually use 2% milk.
- Eggs: The eggs will need to be separated – you’ll use the yolks and the whites at different points.
- Oil: I will typically use vegetable oil. Feel free to swap in another neutral oil, or you could use melted butter.
- Marshmallow Creme: You can also use marshmallow fluff.
How to Make S’mores Pancakes
- Start by making the chocolate sauce: Whisk the cocoa powder and water, then mix in the sugar and salt. Bring the mixture to a boil, then let it boil for 3 minutes. Remove it from the heat and let it cool off.
- Make the batter by combining the dry ingredients, then mix in the wet ingredients, minus the egg whites.
- Beat the egg whites until they have stiff peaks.
- Fold the egg whites into the pancake batter.
- Cook the pancake batter on a griddle or in a hot skillet.
- While the pancakes are baking, make the marshmallow sauce by mixing the marshmallow creme and some hot water until the sauce is thin enough to pour.
- To serve, top a stack of the pancakes with the chocolate sauce and the marshmallow sauce.
Tips and Tricks
Be gentle while folding in the egg whites so that you don’t deflate the egg whites.
I use about 1/4 to 1/3 cup of batter per pancake, and end up with about 12 pancakes.
I like to add a little bit of extra crumbled graham crackers on top, but they are optional.
The chocolate sauce is pretty thin when it comes off the heat, but it will thicken up as it cools. That is why I like to make it first – to give it time to cool down and thicken up.

S’mores Pancakes
Ingredients
Chocolate Sauce:
- 1/3 cup unsweetened cocoa powder
- 1/2 cup water
- 3/4 cup sugar
- 1/4 teaspoon salt
Graham Cracker Pancakes:
- 1 1/4 cups all-purpose flour
- 3/4 cup fine graham cracker crumbs from about 6 full graham crackers
- 3 tablespoons sugar
- 1 tablespoon baking powder
- 3/4 teaspoon salt
- 1 1/2 cups milk
- 2 large eggs whites and yolks separated
- 3 tablespoons vegetable oil
Marshmallow Sauce:
- 1 cup marshmallow creme
- 1-2 tablespoons hot water
Instructions
Make the Chocolate Sauce:
- In a saucepan, whisk together the cocoa powder and the water. Stir in the sugar and the salt and cook over medium heat. Bring to a boil, and let it boil for 3 minutes. Remove from the heat and let the sauce cool. (It will thicken slightly as it cools.)
Make the Pancakes:
- In a large bowl, whisk together the flour, graham cracker crumbs, sugar, baking powder, and salt. In another bowl, (I like to use a large liquid measuring cup), mix together the milk, egg yolks, and oil. Pour the wet ingredients into the dry ingredients and mix just until combined.
- Place the egg whites in another bowl. Use a hand mixer to beat the egg whites until they have stiff peaks. Gently for the egg whites into the pancake batter.
- Heat a lightly oiled or buttered griddle over medium heat. Pour about 1/4 cup of the batter on the hot griddle and cook until browned, the flip and cook the second sauce. Continue with all of the batter.
Make the Marshmallow Sauce:
- In a small bowl, stir the hot water into the marshmallow creme, about 1 teaspoon at a time, until the sauce is a pourable consistency.
To Serve:
- Place a few pancakes on each plate and top with the chocolate sauce and the marshmallow sauce.
