Years ago, I wrote a cookbook all about smoothies – Best 100 Smoothies for Kids (affiliate link). During the process of writing that book, I tried pretty much everything and anything in a smoothie. Sometimes, different ingredients didn’t work at all and were epic failures. But sometimes, I would find a new favorite ingredient.
One of those ingredients was carrot juice.
Now, if you’ve never had carrot juice in a smoothie, you are really missing out.
Up until the book, I had never tried carrot juice in a smoothie. I know that some people will blend whole carrots, but I found that the whole carrots gave it thicker texture with never really smooths out no matter how much you blend it. And since I don’t own a juicer, I take the easy route and use store-bought carrot juice.
This smoothie has a great punch of tropical flavors, and makes a great breakfast smoothie, or a great afternoon snack. And I love that I’m getting some veggies in without even really noticing it!
How to Make It
Does it get any easier than a smoothie recipe?
- Simply combine all of the ingredients in a blender and blend until smooth.
- Serve!
Tips and Tricks
- Carrot juice is usually pretty easy to find. Start by looking in refrigerated section of the produce department in your grocery store. If your grocery store doesn’t have it, you can check at a health food store. I have even seen it at the gas station before!
- If you can’t find carrot juice (and you don’t have a juicer) you can make your own, but it will take a bit of work. Place chopped carrots in a blender and add enough water to go about halfway up the carrots. Blend until there are no chunks of carrot. Pour this into a cheesecloth that is over a bowl or a large measuring cup. Squeeze all of the liquid out.
- Add in a bit of fresh ginger for a little zing and added nutrients.
- For a creamier smoothie, add in half of a frozen banana.
- This is best when served right away.

Tropical Carrot Smoothie
Ingredients
- 2 1/4 cups carrot juice
- 1 1/2 cups frozen pineapple
- 1 1/2 cups frozen mango
- 1-2 kiwi fruits peeled and sliced
Instructions
- Pour the carrot juice into a blender. Add the pineapple, mango and kiwi and process until smooth.
- Serve immediately.

I bet if you roasted the carrots you could get them smooth (and it would add fabulous flavor) but I think this is pretty perfect as is!
