So, I am not a good planner. At least when it comes to vacations.
I’m going to be honest here – I rarely have to even plan my own vacations. When I’m out of town, the schedule is usually planned by someone else, and I just show up and go along with it. I never realized how much I appreciated that someone else does the planning until recently.
I am currently planning a vacation for my family. We are heading to San Francisco, and then are going to drive up the coast through the redwoods. I cannot even tell you how many hours I have spent researching routes and hotels. And I haven’t even gotten started on the food yet!! 😉
I’m super excited for the vacation, and can’t wait to explore northern California, but I won’t lie and say I’ll miss the planning aspect of this. It’s so much less stress when you allow someone else to do all of the planning for you!! 🙂
Planning a vacation may stress me out, but planning a menu, on the other hand, is something I love to do. I’m not very good at winging dinner – I need to have a plan in place. And part of my plan each week is to include 1 or 2 recipes that are super easy and super quick, in case the day gets busy or gets away from us. This Grilled Brown Sugar Mustard Chicken is a recipe that definitely fits the bill.
All you need are 5 ingredients and 20 minutes. Yep – dinner on the table in 20 minutes! And it’s a bonus that this is a grilling recipe – no need to even heat the house up! I love using chicken thighs, as I think they are a lot easier to cook and they have a lot more flavor than chicken breasts. I’m sure you could probably swap in breasts, but cooking time will probably be different, and the breasts probably won’t soak in that extra flavor like the thighs do.
This is a summer meal that is perfect for any night and will become a go-to staple!

Grilled Brown Sugar Mustard Chicken
Ingredients
- 1/2 cup prepared yellow mustard
- 1/3 cup packed light brown sugar
- 1/2 teaspoon ground allspice
- pinch crushed red pepper flakes
- 8 boneless skinless chicken thighs, about 2 lbs.
Instructions
- Heat a grill to medium.
- Combine the mustard, brown sugar, allspice and red pepper flakes in a large bowl. Reserve 1/4 cup of the sauce, then add the chicken. Stir to coat the chicken.
- *Grill the chicken, covered, for 6-8 minutes on each side, or until cooked through. Serve the chicken with the reserved mustard sauce.

Great recipe! I used whole grain brown mustard and chicken breasts instead. Grill chicken and served over rice. Next time I will use less sugar .
