It is almost time to ring in the new year, can you believe it?
Every year, my family gets together for a New Year’s Eve celebration, and it’s one of my favorite meals of the year. Instead of making a dinner, we all just contribute a few appetizers, and we spend all night playing games and talking and laughing and of course – eating!! A night full of family and appetizers – does it get any better?
In preparation of the big night, I have been playing around with some different appetizers, looking for something new to take this year.
And these Sausage Stuffed Peppers are definitely party worthy!!
I love jalapeño poppers, but not everyone always loves the spicy peppers. I love these little sweet peppers – you get lots of flavor without the heat. Instead of just stuffing them with cream cheese, they also get a mini smoked sausage.
I love little smokies, and stuffing them inside the peppers brings these Sausage Stuffed Peppers to a whole new level.
But it doesn’t end there! They also get wrapped in bacon and then baked until the peppers are tender, the cheese is melty, and the bacon is cooked through. Turn the oven onto broil for the last few minutes to crisp up the bacon if you want.

Bacon Wrapped Sausage Stuffed Peppers
Ingredients
- 14 mini sweet peppers
- 4 oz cream cheese softened
- 14 miniature smoked sausages
- 7 bacon strips
Instructions
- Preheat the oven to 350ºF. Cut a small slit across the top and then another slit down the side of each pepper. Open up the pepper and remove the seeds and the membranes.
- Cut the cream cheese into 14 even pieces. Stuff one piece into the inside of each pepper. Stuff a sausage inside each of the peppers after the cream cheese.
- Cut the bacon strips in half. Wrap a half a slice of bacon around each pepper. (Try to end the bacon on the underside of the pepper to keep it in place.) Place the peppers in a 9×13-inch baking dish. Place in the preheated oven and bake until the peppers are soft and the bacon is cooked, about 40 minutes. I like to turn on the broiler for the last few minutes to crisp up the bacon.
