You get a lot of flavor from just a few ingredients. And you can’t beat a slow cooker recipe that only takes minutes to throw together.
Ingredients
- Beef Stew Meat: You can buy beef stew meat at the grocery store, or you can cut up some meat yourself. I prefer to use a chuck roast and cut it into cubes.
- Salsa: Make sure you are using a salsa that you already know you love. The first time I made this slow cooker beef, I used a salsa that we really like and it was fantastic. The second time I used a salsa that I just needed to get rid of, and we didn’t like it as much.
- Brown Sugar: This just adds a little bit of sweetness – not a lot at all!
- Soy Sauce: The soy sauce adds some depth to the flavor. Make sure to use reduced sodium soy sauce.
- Garlic: I like fresh garlic the best.
- Rice: I used white rice, but brown rice, or even cauliflower rice would work!
- Cilantro: The cilantro just brightens everything up and brings in some fresh flavor.
How to Make Slow Cooker Beef with Salsa
- Combine the beef, salsa, brown sugar, soy sauce, and garlic in your slow cooker.
- Cook on low until the beef is tender.
- Serve over rice, topped with fresh cilantro.

Slow Cooker Beef with Salsa
Ingredients
- 2 lbs beef stew meat cut into 3/4-inch cubes
- 2 cups salsa*
- 1 tablespoon brown sugar
- 1 tablespoon reduced sodium soy sauce
- 1 clove garlic minced
- 4 cups cooked rice
- cilantro
Instructions
- Combine the beef, salsa, brown sugar, soy sauce and garlic in a 3-quart slow cooker.
- Cover and cook on low for 6-8 hours, or until the meat is tender.
- Serve the beef over rice, topped with cilantro.

Thanks, this was yummy! I usually get the cheapest salsa ever so I’m sure it’d be better with the good stuff. The addition of soy sauce reminded me of a Peruvian saltado so I added cumin and topped with sweet potato fries for kicks and giggles.

I haven’t tried, so I can’t say for sure, but I’m guessing this would work on the stove top or in the oven. It would definitely cook shorter, but definitely worth a try!
