Being a food blogger in January is a funny thing. Well, at least for a blogger that doesn’t blog about healthy recipes all the time. We know that people go gung ho for the healthy recipes when the calendar changes to January, but when is it ok to start posting about treats and sweets again? If it’s too early, will it fall on deaf ears because everyone is more interested in calories and macros and carb counts?
All I can say is that it’s a good thing that I’m a moderation in everything kind of girl. And that dessert didn’t stop just because January hit. Because right now, all I want is one of these Banana Cheesecake Cookie Bars.
I was recently in an organizing mood and was going through old folders on my computer. I came upon a folder full of recipes that I wrote for Pillsbury and Betty Crocker a long time ago. (PS – it’s crazy to think about how long I’ve been doing this. Those recipes were all probably 5 years old!) I was feeling reminiscent and inspired for those recipes, so I decided to remake one of them to share with all of you today. I also took new photos, because let’s face it – my photo skills have definitely improved in the last 5 years.
I don’t always take shortcuts when it comes to baking, but sometimes, that is what you need to do. And in this case, starting with store bought cookie dough totally works. These Banana Cheesecake Cookie Bars only have a few ingredients, and really are super easy to put together. If you really wanted to, you could make homemade sugar cookie dough, but in this recipe, the store bought is where it’s at. If you are ever looking for an alternative to banana bread for those overripe bananas, these cheesecake bars need to be first on your list.

Banana Cheesecake Cookie Bars
Ingredients
- 16.5 oz roll refrigerated sugar cookie dough
- 16 oz cream cheese softened
- 1/2 cup sugar
- 1 teaspoon vanilla
- 2 eggs
- 1 cup mashed ripe bananas (about 2 medium bananas)
- Whipped cream for serving (optional)
Instructions
- Heat the oven to 350ºF. Spray a 9×13-inch baking dish with nonstick cooking spray.
- Break the cookie dough into pieces and press it into the bottom of the baking dish. Bake for 10 to 15 minutes, or until the dough is lightly set. Cool for 15 minutes.
- In a large bowl, beat the cream cheese and sugar until it is smooth. Beat in the vanilla, then the eggs, one at a time, scraping down the sides of the bowl as needed. Beat in the mashed bananas.
- Pour the cream cheese mixture over the cooled crust. Bake for 30 minutes, to until the outside edges of the cheesecake are set. Cool for 15 minutes, then refrigerate until completely cool before cutting.
- If desired, serve with whipped cream.
