We’ve been making this strawberry syrup for years. The minute the strawberries start to get sweet and juicy, I start making this recipe to keep on hand. We love it – especially how versatile it is!
Back when I first started making this syrup, we had the best strawberry bushes that gave us strawberries all summer long. I’ll have more of those bushes one day, but for now, I will buy up all of the strawberries once the good ones come around.
Our favorite way to use this strawberry syrup is on pancakes, but really, it’s good on anything. And it keeps well in the refrigerator, so there is no excuse to not have it on hand all summer long!

Ingredients
All you need are 3 ingredients!
- Strawberries: The more ripe and sweet the strawberries are, the better!
- Sugar: Yes, there is a lot of sugar. But this is a syrup, and all that sugar is needed to sweeten and thicken the syrup.
- Lemon Juice: Use fresh lemon juice for the best results.
How to Make Strawberry Syrup
Place the strawberries in a blender or food processor and process until the mixture is smooth.
Press the mixture through a fine sieve over a medium saucepan so that you can remove the seeds. I like to take a spatula and press as much of the mixture through – this will take a minute or two.
You’ll be left with all the seeds – discard these and then add the sugar to the saucepan.
Place the saucepan over low heat and cook until the sugar has dissolved, then turn the heat up to medium. Let it come to a boil, then boil for 5 minutes.
Remove from the heat and stir in the lemon juice. It’s as easy as that!

Do you need to refrigerate strawberry syrup?
Yes – once the syrup has cooled, store it in the refrigerator in a container with a lid.
Can you use frozen berries?
You can – I prefer fresh berries but frozen will work in a pinch. Frozen usually end up being wetter once they are thawed, so your syrup may be thinner if you use frozen berries.
How long will this syrup last?
Stored in the refrigerator, it will last up to 2 weeks.
Can you freeze it?
Yes. Transfer the cooled syrup to a freezer safe container and freeze for up to 3 months. Thaw it overnight in the refrigerator.
Should you serve this syrup warm or cold?
You can do either! For pancakes or waffles, I like to warm it up slightly. And once it has been in the refrigerator, you may want to heat it to loosen it up a bit.

Strawberry Syrup Recipe
Ingredients
- 1 pound strawberries diced
- 2 cups sugar
- 1/4 teaspoon fresh lemon juice
Instructions
- Place the strawberries in a blender or food processor and process until smooth. Press through a fine mesh sieve into a medium saucepan to remove all seeds. Discard seeds.
- To the strawberries, add the sugar and place over low heat. Stir until the sugar has dissolved, then increase the heat to medium and bring to a boil. Boil for 5 minutes. Skim any foam off the top of the mixture with a spoon.
- Place in a jar and refrigerate until cooled. The mixture will thicken as it cools.
