I always love salmon recipes. I love salmon to start off with, and it is just so easy to prepare. I used to be scared of preparing any type of fish until I discovered it’s much easier to cook a salmon fillet perfectly than it is to cook a chicken breast perfectly! This salmon is exactly what the title says – amazingly moist. If you are a mayonnaise hater, you’ll probably want to skip this one, but I love it, so I loved this recipe.
How to Make Amazingly Moist Salmon
- Preheat the oven and prep a baking sheet by lining with foil and spraying with nonstick cooking spray.
- Combine the mayonnaise, mustard, parsley and lemon zest in a bowl.
- Season the salmon with salt and pepper and place on the prepared baking sheet.
- Spread the mayonnaise mixture evenly over the tops of the filets.
- Bake until the fish is done.

Amazingly Moist Salmon
Ingredients
- 3 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- 2 tablespoons chopped fresh parsley
- 1 teaspoon grated lemon zest
- 4 salmon filets about 6 oz each
- salt and pepper
Instructions
- Preheat the oven to 500ºF. Spray a baking sheet with nonstick cooking spray.
- Combine the mayonnaise, mustard, parsley and lemon zest in a small bowl. Season the salmon with salt and pepper, then place on the baking sheet. Spread the mayonnaise mixture over the top of each of the filets.
- Bake until the salmon flakes easily with a fork, 10 to 12 minutes. Serve.

Hi. I’ve made this 2 times already and 3rd time today. Love this recipe. Although both time I had sliced up the salmon in fillet form and today lathered the spread on a whole salmon so worried if it’ll cook well… oh well

This is the second time I have heard that mayo creates a great marinade basis for fish. A fiend of mine suggested to use it for BBQ-ing and not being a bit BBQ lover I was skeptical but it must be time to try!
