A healthy-ish breakfast recipe, these Oatmeal Muffins are filling and flavorful and perfect for breakfast on the go.

These oatmeal muffins are a perfect combination of healthy and delicious! I originally only made these to give a friend some healthier options at a gathering, but I liked them so much I decided to keep making them.
These oatmeal muffins definitely didn’t make me feel too guilty for being the only thing I made for breakfast for my kids, and hopefully it does the same for you. The perfect combination of moist and hearty, you’ll be sure to love these!
One tip – make sure to read through the recipe before baking these muffins. They do take a little more time than most muffins because you need to let the oats and the milk soak together so that the oats soften up.
Ingredients
One thing I love about this recipe is that it consists of ingredients that most will normally have on hand, because there is nothing worse than having to go to the store for just one or two ingredients!
- Oats: You’ll want to use old fashioned oats.
- Milk: I use 2% milk, but you should be ok subbing in a non-dairy milk, as well.
- Applesauce: You cut back on the fat a bit by using applesauce. It also helps to keep the muffins nice and moist.
- Egg: You only need one large egg.
- Vanilla: I like to use pure vanilla extract.
- Butter: I use unsalted butter. If you use salted butter, only add about 1/4 teaspoon of salt instead of 1/2 teaspoon.
- Flour: These oatmeal muffins do call for whole wheat flour, but you could substitute in all-purpose flour. It could potentially alter the density of the muffin, and it would take away a bit of the healthiness of the muffins, but it would definitely be an option if that is what you have on hand. That being said, I would recommend sticking with the whole wheat flour, if at all possible.
- Sugar: You’ll use brown sugar in the muffins, plus you’ll sprinkle a little bit of granulated sugar on top of the muffins.
- Baking Powder and Baking Soda: You’ll need the combination of both the baking soda and baking powder for these muffins.
- Cinnamon: This gives the muffins a hint of cinnamon flavor.
- Salt: The salt balances the flavors.
How to Make Oatmeal Muffins
- Combine the oats and the milk in a small bowl and let them sit for one hour for the oats to soften up.
- Mix together the applesauce, egg, and vanilla, then stir in the oat mixture. Then mix in the melted butter.
- Add the dry ingredients – the flour, sugar, baking powder, baking soda, cinnamon, and salt. Mix just until the batter is combined.
- Divide the batter evenly in prepared muffin tins, then sprinkle the sugar on top.
- Bake until the muffins are cooked through.
What to Serve With Oatmeal Muffins
If I do want to go all out for a breakfast or brunch, I have quite a few favorite things that I love to serve with these muffins.
Something my kids have been loving are platters where they can pick and choose what they get to eat. Here are some ideas of what I will put out for them to choose from:
- three or four different kinds of cut fruit
- yogurt cups
- either bacon or sausage links
- scrambled eggs
- these Oatmeal Muffins
For brunches I will also make a breakfast casserole and some type of fruit salad. It’s nice to pair some savory dishes with this sweet muffin, the balance is perfect!

Oatmeal Muffins
Ingredients
- 1 cup old fashioned oats
- 1/2 cup milk
- 1 cup unsweetened applesauce
- 1 large egg
- 1 teaspoon vanilla extract
- 3 tablespoons butter melted
- 1 cup whole wheat flour
- 1/2 cup brown sugar
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon sugar
Instructions
- Combine the oats and the milk in a small bowl. Let it sit for an hour.
- Heat the oven to 400ºF.
- Prepare a 12-cup muffin pan by spraying with nonstick cooking spray.
- In a large bowl, combine the applesauce, egg and vanilla extract. Stir in the oat mixture.
- Add the melted butter and stir to combine.
- Add the flour, brown sugar, baking powder, cinnamon, baking soda and salt. Stir just until combined.
- Divide the mixture evenly between 12 cups, about 2/3 full.
- Sprinkle the 1 teaspoon of sugar over the tops of the the muffins.
- Bake until the muffins are cooked through and a toothpick inserted in the top comes out clean, about 14 minutes.

Thank you for posting =) I am trying to get my sons and I healthier so these are right up my alley!Second, I am a Twitter addict. Yes, it is time consuming but I find that its a great way to network. I get alot of traffic from Twitter, many of which have subscribed so I say go for it!Third, as a single mom my time is also limited. I find using an alarm when I go on Twitter very helpful. You can do two 15 minute increments- once in the morning and again in the evening. This ensures your tweets reach different audiences! Hope this helps and please make sure you tweet me when you join. I have twitter but don't have the capability on my phone and try to stay off of it at work…so sometimes i go a few days without tweeting. i find it useful sometimes but not necessary–if you don't want it, don't add it as another busy thing to a busy life!
