Creamy and hearty, this Bacon Cheeseburger Chowder adds the flavors of a bacon cheeseburger into a comforting bowl of thick chowder.

If you are looking for a big bowl of creamy, hearty, comforting, flavor-packed soup, this is it. There is nothing better than a warm bowl of chowder – especially when it is filled with the flavors of a bacon cheeseburger!

We are in those winter months when it’s just cold and dreary, so I think it’s a perfect time to make this Bacon Cheeseburger Chowder!
Ingredients
- Ground Beef: I like a ground beef that is on the lean side for this recipe, just so that I don’t have to worry about draining off fat.
- Onion, Bell Pepper & Garlic: These are all for flavor. I used a yellow onion and a red bell pepper, but feel free to change those up.
- Flour: This helps to thicken the soup. I use all-purpose flour.
- Milk & Beef Broth: I love the mixture of milk and broth. The milk makes it nice and creamy and the broth gives it lots of flavor.
- Potatoes: These are a must for any chowder! I used russet potatoes.
- Bacon: You can use either thick cut or regular cut bacon.
- Cheese: For this recipe, you use processed cheese, like Velveeta. It’s just the only thing that will make it super creamy. You can always experiment with other cheeses, but the Velveeta works perfectly.
- Green Onions: The green onions are added to the top of the finished chowder – they are optional.
How to Make Bacon Cheeseburger Chowder
- Start by cooking the beef, onion, and pepper together until the beef is cooked through and the vegetables are soft.
- Sprinkle in the garlic and the flour. Stir this and cook for another minute.
- Add in the milk, broth, and potatoes. Cook this all together until the potatoes are tender.
- While the soup is cooking, cook the bacon in another skillet.
- Once the potatoes are tender, stir in the cheese and stir until the cheese is melted.
- Add the bacon to the soup, then taste and season with salt and pepper, if needed.
Tips and Tricks
I added some homemade croutons and they were a fun addition. I had some leftover hamburger buns and toasted them up. Delicious, the soup is still great without them.
This soup gets thick as leftovers, so if needed, add some extra beef broth when reheating.
Make sure and save some of the bacon to serve on top!

Bacon Cheeseburger Chowder
Ingredients
- 1 lb ground beef
- 1 medium onion diced (about 1 cup)
- 1 medium red sweet bell pepper diced (about 1 cup)
- 1 clove garlic minced
- 3 tablespoons all-purpose flour
- 2 1/2 cups milk
- 2 cups beef broth
- 1 lb potatoes peeled and diced
- 5 oz bacon diced
- 12 oz processed cheese such as Velveeta, cubed
- sliced green onions optional
Instructions
- Heat a large soup pot or Dutch oven over medium-high heat. Add the ground beef, the onion and the pepper and cook, breaking up the beef as it cooks, until the beef is browned and cooked through and the vegetables are soft.
- Stir in the garlic and the flour. Cook for 1 minute.
- Slowly stir in the milk. Stir in the beef broth and potatoes. Bring the mixture to a boil, then reduce the heat and simmer until the potatoes are cooked through, 15-20 minutes.
- While the soup is cooking, place the bacon in a small saucepan and cook until crisp. Remove to a paper-towel lined plate with a slotted spoon.
- When the potatoes are tender, stir in the cheese until melted. Add the bacon, reserving some for topping the soup, and stir to combine. Season to taste with salt and pepper.
- Serve the soup topped with the bacon and sliced green onions, if desired. Serve warm.

Do you drain fat from the hamburger?

I don’t, but I tend to buy lean beef that doesn’t really need draining. But you can definitely drain it if you desire!
