Sometimes when I sit down to compose a blog post, the words flow freely. Almost like I have too much to say. And other times, the words just are not there. No matter how long I sit and stare at the computer, nothing comes to me.
It’s quite the frustrating feeling. And, well, right now is one of those times. I have started writing about 10 different posts, only to go back and delete every single letter.
So I’m doing what I do best in these situations. I’m keeping my mouth shut. Mostly.

These Bacon Cheeseburger Quesadillas have all of the goodness of a cheeseburger, wrapped up in a tortilla and grilled to perfection. Seriously – keep this on on hand. You’ll thank me for it!

Bacon Cheeseburger Quesadillas
Ingredients
- 1/2 lb bacon diced
- 1 1/2 lb ground beef
- 2 tablespoons ketchup
- 2 tablespoons mustard
- 4 10-inch flour tortillas
- 1 1/2 cups shredded sharp cheddar cheese
- Shredded lettuce
- diced tomatoes
Instructions
- Heat a medium skillet over medium heat. Add the diced bacon and cook until crisp. Remove to a paper towel lined plate. Drain off all of the bacon grease except 1 tablespoon. Add the ground beef and cook until browned and cooked through. Add the bacon back into the beef, and then stir in the ketchup and mustard.
- Heat a griddle over medium heat. Put a layer of cheese on 2 of the tortillas. Add half of the meat mixture on top of each of the tortillas, followed by another layer of cheese. Top with the remaining tortillas. Grill until golden and until the cheese has melted, 5-10 minutes. Serve garnished with shredded lettuce and diced tomatoes.

Seriously, I’ve got an abundance of tortillas in my house right now because we went to Cosco last weekend and I keep thinking up things to use them for. Not like it’s hard, but I like trying new things. I’m actually making Rachael’s Mexican Lasagna next Tuesday for our Mexican night…but I think these will have to make the list for the week after. These look excellent!
Oh…speaking of Rachael…we made her Chipotle Turkey Chili with Apples and Cheddar last night for our Halloween Chili–if you haven’t made it yet, YOU’VE GOT TOO! It is so so good! I made it with only 1 lb of ground turkey…so Josh suggested (cause we like to try and make our meat stretch…budget ya know) adding frozen corn and beans to it. So I’m going to try that next, but I’m telling you…it is super good. All of our family that came over last night was oohing and aaahing over how good it smelled in my kitchen. Try it!!
