This recipe is one that I found while flipping through one of my cookbooks – Everyday Food: Light – a little while back. And this recipe is so simple, and so good, that I’ve actually made it a few times since then. This is the perfect weeknight recipe – on the table in well under 30 minutes!
Ingredients
Gnocchi: Gnocchi is easy to find at most grocery stores, stocked in with the pasta. If you’ve never had gnocchi, they are potato dumplings, and have such a unique texture. They are a family favorite around here!
Marinara: I like to make up a big batch of my homemade marinara and freeze it in 1/2 cup portions. Then when I go to make this, I can pull out 2 portions and it’s super easy. You could always use a store bought marinara, as well.
Ricotta & Parmesan: Both of these are vital, in my opinion. Since there are so few ingredients, if you leave one off, you will notice. The first time I made it, I didn’t have any Parmesan on hand, and it was ok, but I definitely think this recipe needs it.
Parsley: I always like to add a bit of freshness at the end, so the parsley works well for this. But if you don’t have it, it is not a vital ingredient.

Baked Gnocchi with Ricotta
Ingredients
- 16 oz package gnocchi
- 1 cup marinara
- 3/4 cup ricotta cheese
- 1/4 cup grated parmesan
- chopped parsley
Instructions
- Preheat the broiler.
- Bring a large pot of salted water to a boil. Cook the gnocchi according to package directions. Drain.
- Place the gnocchi in the bottom of a 2 quart baking dish. Pour the marinara over the top. Dollop the ricotta over the top, then sprinkle with parmesan. Place under the broiler until the cheese is melted and heated through, about 5 minutes. Top with parsley before serving.
