No need to fry – these Banana Donuts with Peanut Butter Icing are baked in the oven! A great use for those overripe bananas, these tender donuts are the perfect snack or special breakfast.
Don’t let your baked donut end with these donuts! You also need to try these Baked Key Lime Pie Donuts and these Baked Pumpkin Donuts.
We seem to always go through bananas really fast, or we end up with a bunch of them sitting on the counter, too ripe to eat.
Which I’m always ok with, because it means I get to bake with them!
And these Banana Donuts have been begging to be re-made for quite some time now.
Don’t get me wrong – I will never say no to banana bread. But sometimes you need something different. And these Banana Donuts with Peanut Butter Icing are just that. A delicious treat that you can serve for breakfast, snack time, or dessert.
The original recipe posted here actually had bacon on top, as well. And while I chose to keep it off this time, it is definitely a delicious addition for those of you who love the sweet and salty combination!
Ingredients
- Flour: I have only tested this recipe with all-purpose flour.
- Sugar: You will need regular granulated sugar.
- Baking Powder: The baking powder is necessary to give the donuts a light texture and rise.
- Salt: Don’t skip the salt! Salt is important in baked goods to balance the flavors.
- Eggs: You’ll want to use large eggs.
- Oil: I typically use vegetable oil, but any neutral oil will work. You can also use melted butter, but I find that the oil keeps the donuts more moist.
- Bananas: You want to use overripe bananas because they will give you the best flavor and most sweetness.
- Powdered Sugar: This is for the icing.
- Peanut Butter: I use a conventional peanut butter (like Jif or Skippy) for this recipe.
- Milk: You could also use heavy cream, but you will probably need a little bit more, since it is thicker.
How to Make Banana Donuts
STEP 1: Start by whisking your dry ingredients together. You’ll want to do this in a large bowl.
STEP 2: In another bowl, whisk the eggs and the oil together.
STEP 3: Add the wet ingredients to the dry ingredients. Start to stir this together – it’s quite dry at this point, so don’t go crazy. You just want to get it started.
STEP 4: Add in your mashed bananas, then stir to combine it all together. Make sure you don’t overmix the batter.
STEP 5: Fill the cavities of your donut pan about 2/3 to 3/4 full of the batter.
STEP 6: Bake the donuts in the oven until they are cooked through. I like to test them by pressing gently on the top – if it bounces back, the donuts are done.
STEP 7: To make the peanut butter icing, mix together the powdered sugar and the peanut butter. Add in half of the milk, and stir until it is smooth. Continue to add more milk until you have a good consistency for frosting.
STEP 8: Spread the icing over the tops of the cooled donuts. I just do this with a spoon.
Tips and Tricks
I have this donut pan, and it has served me well for many years now. I do want to eventually try a silicone donut pan, though.
My pan only makes 6 donuts at a time, and I only have one pan. So I do have to make 4 batches. Just make sure to let the pan cool between batches.
This recipe can easily be cut in half.
I like to use a piping bag or a ziplock bag with the corner cut off for filling the cavities on the donut pan. It keeps things more even and cleaner!
Storage Instructions
These donuts are best served fresh. You can store them in an airtight container at room temperature, but I would still suggest serving within 24 hours for the best results.
You could also freeze the donuts if you want to save some for later, but I’d suggest freezing them without the icing.

Banana Donuts with Peanut Butter Icing
Ingredients
Banana Donuts
- 2 cups flour
- 1 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 eggs
- 1/2 cup neutral oil*
- 1 1/2 cups mashed banana
Peanut Butter Icing
- 1 1/2 cups powdered sugar
- 1/4 cup creamy peanut butter
- 4 tablespoons milk
Instructions
- Preheat the oven to 350ºF. Spray a donut pan with nonstick cooking spray.
- In a large bowl, combine the flour, sugar, baking powder and salt. Whisk well to combine.
- In another bowl, whisk together the eggs and oil. Add the wet ingredients to the bowl with the dry ingredients and mix until it starts to come together. It will still be quite dry.
- Add the mashed bananas, and mix just until everything is combined, making sure you don’t have any pockets of dry ingredients.
- Fill the donut pan with the batter to about 2/3 full. I find that this is easiest by putting the batter into a piping bag or large ziplock bag, cutting off the corner to use it as a piping bag.
- Bake the donuts until they spring back when lightly touched on top, about 12 minutes. Let the donuts cool in the pan for about 5 minutes before removing to a wire rack to cool completely.
- To make the icing, combine the powdered sugar, peanut butter, and half of the milk in a bowl. Whisk to combine. Continue to add the milk until you have your desired consistency.
- Once the donuts are cool, top them with the icing.
