Oh, Flo’s V8 Cafe – how I have a love for you.
My sisters and I discovered our love of breakfast at Flo’s V8 Cafe a few visits back. And now it has become a must every time we are at Disneyland. And quite honestly – I crave their breakfast when I’m not there, as well!!
We always order 2 things – the Chicken Breakfast Tamale and the Brioche French Toast. I am seriously obsessed.
Last week, I shared our video from our 2 days at Disneyland. It was a delicious 2 days at Disneyland.
But when it came time to decide what recipe to make that was inspired by one of the things we ate, it was no contest. It had to be the brioche French toast. (And let me just say – one day, I’m going to learn how to make tamales so I can make that breakfast tamale at home!)
Surprisingly, this recipe took me several attempts to get just right, but it was totally worth it. Because this breakfast is off the charts delicious.
And now I love that anytime I’m feeling lonely for Disneyland, I can get into the kitchen and make this Brioche French Toast with Salted Caramel to make me feel like I’m back at Flo’s.
What is Brioche?
Brioche is one of my favorite breads. It is a richer bread, made with lots of butter and eggs. It is still fairly light and fluffy, with a tender crumb, but it also holds up really well for French Toast. In fact, I read that Brioche was what was actually used in the very first French toast. It is sturdy enough to hold up to the custard soak. And let’s just admit it – all of that butter and eggs makes this a very delicious choice, as well
How to Make the Brioche French Toast Casserole
If you’ve made a French toast casserole before, you’ll be able to make this one!
- Start by cutting the bread into squares about 1″. Place them in a baking dish that has been sprayed with nonstick cooking spray.
- Make the custard by mixing together eggs, milk, sugar, vanilla, cinnamon and salt.
- Pour the custard mixture over the bread cubes. Use your hands of the back of a spatula to make sure all of the bread cubes are soaked with the mixture.
- Bake the French Toast until it is browned and cooked through, about 40 minutes.

Tips for Making Caramel at home
Making homemade caramel sauce can be a bit intimidating. But it really is quite easy. Here are a few tips to make it easily at home:
- Watch your temperature. You want to keep it at medium – don’t be tempted to try to rush it along.
- This is a time to put away all of your distractions. A caramel sauce can go from perfect to burned in a matter of seconds.
- I don’t stir my sugar mixture. But if the mixture is starting to crystallize, I’ll swirl the pan so that the sugar does not burn and so that the whole mixture does not crystallize.
- Refrigerate any leftover caramel sauce – it’s great on ice cream!

Brioche French Toast with Salted Caramel and Bananas
Ingredients
French Toast:
- 16 oz loaf brioche, cubed into 1-inch cubes
- 4 eggs
- 2 1/2 cups milk
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- Pinch of salt
Salted Caramel:
- 1 cup sugar
- 1/3 cup water
- 1/2 cup heavy whipping cream
- 2 tablespoons unsalted butter
- 1/2 teaspoon kosher salt
- 2 bananas
Instructions
- Preheat the oven to 350ºF. Spray a 9×13-inch casserole dish with nonstick cooking spray or grease with butter.
- Place the cubed brioche in the bottom of the prepared casserole dish.
- Place the eggs in a large bowl and whisk lightly. Add the milk, sugar, vanilla, cinnamon and salt and whisk to combine.
- Pour the egg mixture over the top of the cubed bread. Use your hands to press the bread down lightly to make sure it is all soaked with the milk and egg mixture.
- Bake in the preheated oven until it is lightly browned and a toothpick inserted in the middle comes out clean, about 40 minutes.
- To make the caramel, place the sugar in a pot and place the pot over medium heat. Gently pour the water into the pan, making sure not to splash the sugar up onto the sides of the pan. Cook, without stirring, until the sugar has melted and become an amber color, 10-12 minutes.
- Warm the cream slightly. When the sugar mixture has turned an amber color, slowly whisk the cream in and continue to whisk until fully combined.
- Remove the pan from the stove and add the butter and the salt. Whisk until the butter has melted.
- To serve, cut a slice of the French toast casserole and place sliced bananas on top. Drizzle with the salted caramel sauce.

I’ve made this for my family twice and I’m about to make it three times, because this recipe is awesome. We also like to serve a little whipped cream on top, because we’re just extra like that.
