Ingredients
- Cream Cheese: If you start with room temperature cream cheese, it will mix together much easier.
- Shredded Chicken: I always like to keep cooked, shredded chicken on hand. If you don’t have any, (or don’t want to make any), you can use a rotisserie chicken. You can also use canned chicken, but I find the texture to be a bit mushy.
- Cheddar Cheese: I like to use a mild cheddar cheese for this dip. You could also use another easy melting cheese, like Monterey Jack.
- Buffalo Sauce: There are many brands of buffalo sauce. Just make sure you use one that you like. Some people swear by regular buffalo sauce, while others say to use buffalo wing sauce. I personally like both of them, so I use what I have on hand.
- Ranch Dressing: If you really like blue cheese, you can use blue cheese dressing instead. But I like the ranch flavor.
- Blue Cheese: We are blue cheese lovers, so adding in some crumbled blue cheese is a must. If the flavor is too strong for you, you can leave the blue cheese out.
- Green Onions: The green onions are just for adding some fresh onion flavor at the end.
How to Make Buffalo Chicken Dip
- When I’m making a dip with cream cheese, I like to use a hand mixer to whip it up, or use a rubber spatula to mash it up a bit. This just helps when you go to mix the other ingredients in.
- Add the cooked chicken, 1 cup of the cheese, the buffalo sauce, the ranch, and the blue cheese. Stir it all together until mixed.
- Pour the mixture into a 8-inch or 9-inch baking dish. I used a square dish, but you can also use a pie pan.
- Top with the remaining cheddar cheese, then bake the dip until it is all melted together and bubbly.
- Sprinkle the green onions over the top before serving. I also like to add a little bit of extra blue cheese.
Frequently Asked Questions
Yes! This is actually super easy to assemble ahead of time then pop it into the oven before you are ready to serve it. I would suggest setting it out at room temperature for about 30 minutes before baking it, though, especially if it is in a glass baking dish.
This dip would be very easy to heat up in the crockpot to keep it warm for serving. Simply mix all of your ingredients together, and instead of placing in a baking dish, add to a slow cooker. Cook on low until it is hot and melted, about 3-4 hours.
I like to serve mine with tortilla chips, celery sticks, and carrot sticks. Some other ideas would be baguette slices, potato chips, or chicken flavored crackers. Or any veggies would be delicious!
Store any leftovers in the fridge in an airtight container.
