Perfect for Game Day and Dinner!
When I think of game day, my thoughts automatically go to buffalo chicken. I’m pretty sure that buffalo chicken and any sporting event go hand in hand.
And bonus – it doesn’t even have to be game day to be a good day to consume these sandwiches. I love them because they are an easy way to use cooked, shredded chicken that you might have on hand. This recipe makes 8 slider sized sandwiches, so serve up 2 per serving for a regular meal. It can also easily be doubled or tripled (or even bigger to feed a crowd!)
So whether you are needing game day food or just a weeknight dinner, these sandwiches are a perfect fit!
Ingredients and Substitutions
- Sour Cream: This is for the slaw on the sandwiches. You could also use plain Greek yogurt.
- Lemon Juice: The lemon juice gives the slaw some acidity. I like to use fresh lemon juice.
- Sugar: The sugar brings just a little bit of sweetness, but it mostly balances the flavors.
- Salt and Pepper: Always make sure to season to taste with salt and pepper.
- Iceberg Lettuce: I like the crunch from the iceberg lettuce. You could also use green cabbage.
- Green Onions: The onions add some extra flavor and crunch. If you don’t love onions, you can leave these out.
- Blue Cheese: Blue cheese and buffalo chicken are made for each other, but I know not everyone loves blue cheese. You could use shredded mozzarella or monterey jack in place of the blue cheese.
- Buffalo Sauce: I usually just use Frank’s Red Hot, but you can use the buffalo sauce of your choice.
- Butter: I usually use unsalted butter.
- Shredded Chicken: I like to cook up a big batch of shredded chicken to keep on hand, (it freezes well!), but you can also use rotisserie chicken.
- Rolls: You’ll just need dinner sized rolls. You can also use Hawaiian rolls.

Buffalo Chicken Sandwiches
Ingredients
- 1/2 cup sour cream
- 4 teaspoons lemon juice
- 1/4 teaspoon sugar
- Salt and pepper
- 4 cups shredded iceberg lettuce
- 4 green onions finely chopped
- 1/4 cup crumbled blue cheese
- 14 cup buffalo sauce
- 1/4 cup butter
- 12 ounces shredded chicken
- 8 rolls
Instructions
- In a bowl, combine the sour cream, lemon juice and sugar. Season with salt and pepper. Stir in the lettuce, green onions and blue cheese.
- In a skillet, combine the buffalo sauce and butter. Add in the chicken and stir to coat. Cook for a few minutes, until the chicken is heated through.
- Cut the rolls in half. Layer the chicken mixture with the blue cheese salad on the rolls.
