These Cake Mix Muffins are so easy to throw together – you can whip up a batch of muffins at a moment’s notice. And I love that you can get creative with the flavors, (although chocolate is my favorite!)

Ingredients
- Cake Mix: You’ll need one cake mix – just the dry mix. You can use any flavor. But like with my cake mix cookies, each flavor of cake mix acts a little differently, and in my opinion, chocolate works the best.
- Pudding Mix: The pudding mix is also just the dry mix. You’ll want a flavor that compliments the cake mix flavor.
- Flour: You will need to add in some extra flour. I use all-purpose flour.
- Baking Powder: This will give the muffins that extra lift that they need.
- Eggs: You need both whole eggs, plus one egg yolk. I use large eggs.
- Milk: You can use any kind of milk that you like. I use 2%.
- Oil: You need a neutral oil for these muffins. I use vegetable oil.
How to Make Cake Mix Muffins
STEP 1: Mix all of the dry ingredients together. This is the cake mix, pudding mix, flour, and baking powder.
STEP 2: Add in the eggs plus egg yolk, milk, and oil.
STEP 3: Stir the batter together until combined. It will be thick, but this is normal. You want to make sure that there are not any dry spots left.
STEP 4: Divide the batter between 16 muffin cups that are greased or lined with paper liners. Bake the muffins until baked through.
Tips and Tricks
- Not all cake mixes are the same size. If you are using a 13.25 oz cake mix, follow the recipe as written. If you are using a larger 15.25 oz cake mix, cut the flour down to 4 tablespoons.
- Any flavor of cake mix/pudding mix can be used, but the texture and appearance does differ slightly between flavors.
- Make sure you don’t over bake the muffins, as they will dry out.
- Store the muffins at room temperature in a covered container. They also freeze well so that you can pull them out as needed.

Cake Mix Muffins
Ingredients
- 1 (13.25 oz) cake mix dry
- 1 (3.4 oz to 3.9 oz) package instant pudding mix dry
- 7 tablespoons flour
- 1 teaspoon baking powder
- 3 whole eggs plus 1 egg yolk
- 2/3 cup milk
- 1/3 cup oil
Instructions
- Preheat the oven to 400ºF. Prepare 16 muffin cups by lining with paper liners or spraying with nonstick cooking spray.
- In a large bowl, mix together the cake mix, pudding mix, flour, and baking powder.
- Make a well in the center of the dry ingredients and add the eggs, egg yolk, milk, and oil.
- Mix everything together until fully mixed.
- Divide the batter evenly between the prepared muffin cups.
- Bake the muffins until cooked through, about 15 minutes.
