As much as I love the pink and the red and the sprinkles, let’s face it – when it comes to Valentine’s Day, my husband could care less. In fact, he is not a sprinkles lover at all.
So when I sat down to think about what to make for this week of sweets, I knew I had to throw in at least one recipe that was more “manly”. Something less frilly, and something my husband would love.
And I knew it couldn’t involve cupcakes, frosting, or anything pink.
Enter Cashew Bacon Brittle.
If you think that nut brittles are just for the holidays, I would like to prove you wrong. Because I’m pretty sure there are quite a few guys who would go a little crazy over this for Valentine’s Day. And who am I kidding – I bet the girls would go just as crazy!!
Sweet and salty is my favorite flavor combination, and this brittle has definitely got that going on. I used my all-time very favorite bacon for this – the Cherry Hardwood Smoked Bacon from Jones Dairy. Seriously – that bacon is amazing. As good as it is on it’s own, combine that with some cashews and sweet brittle – it really is a match made in heaven.
I even had the thought to do some chocolate dipped. Yeah. Totally trying that next time.

Cashew Bacon Brittle
Ingredients
- 8 oz Jones bacon
- 1/2 sugar
- 1/2 cup brown sugar
- 1/2 cup light corn syrup
- 1/4 cup water
- 1 cup salted cashews
- 2 tablespoons butter softened
- 1 teaspoon baking soda
Instructions
- Chop the bacon and cook until crisp. Drain on paper towels and set aside.
- Preheat the oven to 250F. Line a large baking sheet with foil and butter the foil. Place in the oven while you make the brittle.
- In a large saucepan (at least 2 quarts), stir together the sugar, brown sugar, corn syrup and water. Bring to a boil. Place a candy thermometer into the mixture and cook, stirring frequently, until the temperature reaches 290F. Stir bacon pieces and the cashews and continue to cook until the mixture reaches 300F.
- Remove the pan from the heat and stir in the butter and baking soda. (It will foam up - be careful!) Stir just until combined, then remove the prepared pan from the oven and pour the mixture onto the pan. Use 2 forks to lift and pull the brittle out until thin.
- Let cool completely before breaking into pieces and serving.
