I’ve always been a chips and dip kind of person. I just can’t resist it – no matter what.
Especially when the dip is cheesy and hot. Like this Bean Dip.
This is the perfect party recipe. It makes a lot, so it’s easy to feed a crowd. And it’s perfect to serve alongside any Mexican dinner. Cinco de Mayo, Taco Tuesday – really, anytime is a great time for this bean dip!
Ingredients
- Cream Cheese: Make sure your cream cheese is at room temperature. It may not mix in completely smoothly, but it will melt when you bake it, so no worries if you have some small lumps.
- Sour Cream: This helps to make the dip nice and creamy. I use full fat.
- Refried Beans: You can use canned or homemade. Both are great! You could even use refried black beans to change it up a bit.
- Green Chiles: You can use one small can, or if you like to buy them in bulk like I do, just measure out 4 oz.
- Taco Seasoning: If you are not making your own, just make sure to use a brand that you already like.
- Hot Sauce: You can use something spicier like Tabasco, or you can use a more mild taco sauce. It’s up to you!
- Lime Juice: Use fresh lime juice for the best results.
- Cheese: I use a mixture of cheddar and Monterey Jack, but you can sub in any cheese that melts well.
How to Make Bean Dip
1: Blend the cream cheese and sour cream together. You can use a hand mixer, but I just usually stir it together with a spatula.
2: Add in the beans, green chiles, taco seasoning, hot sauce, and lime juice.
3: Stir it all to combine.
4: Add half of the cheese to the mixture and stir.
5: Spread the mixture into a large oven safe skillet or a 9×13-inch baking dish.
6: Top with the remaining cheese, and bake until it is heated through and bubbling.

This dip is delicious as is, but the toppings make it even better! Here are some ideas of things you can add to the baked bean dip. Choose 2 or 5 or all of your favorites!

Bean Dip
Ingredients
- 1 (8 oz) package cream cheese at room temperature
- 1 cup sour cream
- 2 (16 oz each) cans refried beans
- 4 oz diced green chiles
- 2 tablespoons taco seasoning
- 1 tablespoon hot pepper sauce
- Juice of 1 lime
- 8 oz shredded cheddar cheese
- 8 oz shredded Monterey Jack cheese
- Toppings: green onions, tomatoes, cotija, cilantro
Instructions
- Preheat the oven to 350ºF.
- In a bowl, blend together the cream cheese and the sour cream. Add the beans, green chiles, taco seasoning, hot pepper sauce and lime juice. Stir in half of the cheddar cheese and half of the Monterey Jack cheese.
- Transfer the mixture to an oven proof dish. (I used a 12-inch cast iron pan, but a 9×13-inch baking dish will work, as well.) Top with the remaining cheddar and Monterey Jack cheese.
- Bake in the preheated oven until the cheese is melted and the edges are bubbling, about 30 minutes.
- Serve warm, topped with any desired toppings.
