If you love the classic chicken Cobb salad, you’ll adore these Chicken Cobb Salad Wraps! All of your favorite Cobb salad flavors – chicken, blue cheese, bacon, eggs, and more – wrapped up in a tortilla for a tasty lunch or dinner.
I love a good salad for lunch or dinner. And I have them often. But I also love my carbs. So a little while back, I decided to join the two, and I created the Chicken Caesar Wraps that I posted.
That wrap was so good that it really got the wheels in my head turning. I started thinking about all of my favorite salads, and when a chicken cobb salad popped into my head, I knew it had to be my next wrap recipe.
Luckily, this was a super easy recipe to make and is great for days when you need a super easy lunch or dinner. I always try to keep cooked, shredded chicken on hand, just for meals like this. And you can totally make the bacon and the hard boiled eggs ahead of time and have them ready when you are ready to make the wraps.
What ingredients are in a Chicken Cobb Salad Wrap
I tried to keep these Chicken Cobb Salad Wraps in line with what would be on a traditional cobb salad, but I did adapt some to what I had on hand. A traditional Cobb salad has chopped greens, tomatoes, bacon, chicken, hard boiled eggs, avocado, chives, blue cheese and a red wine vinaigrette.
For these wraps, I left off the avocado (although that would be a great addition!), chives and the vinaigrette. Instead of the vinaigrette, I used blue cheese dressing. I do have to say that I questioned my use of hard boiled eggs in a wrap at first. I even asked my husband if it would be weird. But after trying these salad wraps for the first time, my husband and I both agreed that the eggs were a must in this recipe. You would definitely miss that Cobb salad vibe without the eggs.
How long do wraps last in the fridge?
I wish that wraps were super long lasting in the fridge so that you could make up a batch at the beginning of the week and eat them all week long. Unfortunately, these wraps would get pretty soggy by the end of the week.
In order to make them last, you’d have to leave off all of the wet ingredients (the dressing, lettuce and tomatoes), and then you’d be left with a dry wrap.
If you want to make these wraps ahead of time, you can wrap them in plastic wrap and refrigerate them, but I wouldn’t make them more than 24 hours in advance. If you need more than 24 hours, I’d prepare all of the ingredients and store them separately, then make the wraps as you need them.
