A copycat for the Chili’s Queso Dip, this is an all-time favorite dip! It only takes a few ingredients and a few minutes to throw together, and it’s perfect for parties or game day.

For real – it’s a non-negotiable. And I’m totally ok with that, because their queso is delicious.
So today, I’m sharing a homemade version of Chili’s Queso Dip that is just as craveable. And it’s so easy – just a few ingredients, thrown into a slow cooker, and your dip is done!
This is perfect for game day, or for parties, or for anytime you need a good dip.

Ingredients
- Cheese: For this version, you need processed American cheese, aka Velveeta. It will give you the closest copycat. There are versions out there that use actual cheese, but this is not one of them.
- Half and Half: I have made this with milk and with half and half, and I prefer using half and half. It will work with just milk, though.
- No Bean Chili: This is a canned chili. I usually buy the Hormel brand.
- Spices: For the spices, I use paprika, chili powder, cumin, and salt.
How to Make Chili’s Queso Dip
STEP 1: Combine all of the ingredients in a slow cooker. I use a 4 quart slow cooker, but a smaller one will work, as well.
STEP 2: Cook on low until the cheese is melted. This usually takes about an hour, stirring a couple of times during the cook time. Then turn the slow cooker to warm to keep it warm for serving.
Tips and Tricks
- If the dip seems too thin, just take the lid off of the slow cooker and let it cook. It will thicken up.
- Alternately, this can be made on the stovetop. You will just want to make sure you keep it warm to serve.
- You can make this spicier by adding 1/4 to 1/2 teaspoon cayenne pepper.

Chili’s Queso Dip
Ingredients
- 16 oz processed American cheese (such as Velveeta) cubed
- 1 cup half and half
- 1 (15 oz) can no bean chili (such as Hormel)
- 2 teaspoons paprika
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 1 teaspoon salt
Instructions
- Combine all of the ingredients in a slow cooker. Cook, stirring a few times, until the cheese is melted and everything is smooth, about 1 hour on high.
- Keep on warm once heated through.
- Serve with tortilla chips.
