When I find something that I really like, I can’t get it out of my head. Like the Thai Chicken Salad that I posted a few weeks ago. And since I can’t just keep making the same salad and posting it over and over again, I thought I’d do the next best thing and do a variation of that salad.
Hey – maybe I’ll make this summer the summer of chopped salads and see how many I can come up with. My mind is already spinning!!
This was my second confirmation that yes, I do indeed love chopped salads. Give me a big bowl filled with chopped vegetables like this every once in awhile, and I’m a happy girl. I had some leftover wonton wrappers, so I fried them up in strips and absolutely loved what they brought to this salad. In fact, there wasn’t anything about this salad that I didn’t like!

This looks amazing and how funny that I’m pretty anal about all of the same things!! This salad looks amazing!!! I can’t wait to make this one and the asian quinoa salad that Two Peas just posted! We love salads in the summer!

This is always a great salad. Usually I add a piece of chicken on top and it makes a great meal. I keep it in bags and add the dressing later and then I have a salad whenever I need it. Thanks for a good one and i like exclamation points, too!
Georgia @ The Comfort of Cooking says
Absolutely scrumptious! This looks amazing, Deborah. A must-try in my kitchen, especially since I’m always looking to increase my Asian cooking!

LOL you and I have a lot in common! And I usually have to go back and edit out exclamation points because there are too many haha. Love the chopped salad! It’s one of my fav salads.
Aggie says
Gosh, we have a lot in common!! I dislike meat on the bone (still), have to fix toilet paper rolls to “over” all the time, and freak out when mess starts to surround me (however I am NOT a neat and organized person).
I also love this salad. Looks amazing Deb!! I want some for lunch today!

I am the SAAAAAME way about mistakes! I’ll backspace the ENTIRE sentence instead of clicking on the mistake. To me it feel like it takes less time. And I want this salad.

What a pretty salad! I looove salads, and I think part of why I love them is that they’re usually quite colorful with all the different veggies. I love your variation of another great looking chopped salad here!
