Light and fluffy and filled with lots of pockets of chocolate, these Chocolate Chip Pancakes are a delicious breakfast treat. These pancakes are perfect for the weekend, but easy enough for any day of the week.

We are pancake addicts at our house. We have them multiple times a month – for breakfast or for dinner.
And while we often opt for my favorite pancake recipe, my boys have been asking for these Chocolate Chip Pancakes more and more lately.
This recipe is very similar to that traditional pancake recipe, with a couple of changes. We use butter instead of oil, and decrease the sugar just a bit since we’ve got the chocolate chips. Plus we add a good dose of vanilla extract to round it all out.

- Flour: I have only tested this with all-purpose flour.
- Sugar: You get sweetness from the chocolate chips, but I also like to add a little bit of sugar in, as well.
- Baking Powder: The baking powder is important to give the pancakes rise and structure.
- Salt: The salt will help balance the flavors, so don’t skip it. I like to use fine sea salt.
- Milk: I use 2% milk, but any milk should work for these pancakes.
- Butter: I love the flavor of the butter in these pancakes, but you can also use a neutral oil, like vegetable oil or avocado oil.
- Eggs: We are using my favorite pancake trick – you separate the whites and the yolks, and the whites get beaten until they have stiff peaks before folding them into the batter. It makes the pancakes nice and fluffy.
- Vanilla: I always like to use a pure vanilla extract.
- Chocolate Chips: I like to use mini chocolate chips because they incorporate better in the pancakes. And they ensure that every bite has some chocolate.
How to Make Chocolate Chip Pancakes
STEP 1: Mix your dry ingredients together in a large bowl.
STEP 2: In a separate bowl, whisk together the milk, melted butter, and egg yolks. The mixture might look chunky from the butter, but that’s ok!
STEP 3: Pour the wet ingredients into the dry ingredients and mix it all together. Don’t go crazy mixing – there will be lumps, and that’s ok!
STEP 4: In a small bowl, beat the egg whites until they have stiff peaks. I like to use a hand mixer for this.
STEP 5: Add about 1/3 cup of the egg whites to the batter and mix them in. You don’t have to be super gentle – this is lightning the batter before you fold in the remaining whites.
STEP 6: Add the remaining egg whites and the chocolate chips.
STEP 7: Fold this all together gently, just mixing until the egg whites are incorporated.
STEP 8: Heat a griddle or skillet over medium-high heat and melt some butter on the skillet. Pour about 1/3 cup of the batter onto the hot skillet and cook until the pancakes are browned on the bottom and bubbling on the top. Flip and cook the second side. Repeat with all of the batter.

Tips and Tricks
- Try not to over-mix the batter, as it will give you tough pancakes.
- I usually find that the chocolate chips are pretty evenly distributed through the batter, but I do try to scoop to the bottom to make sure they aren’t settling on the bottom.
- My preference is mini chocolate chips, but feel free to switch things up and use white chocolate chips, butterscotch chips, or even peanut butter chips!
- I don’t start to heat the skillet until the batter is completely ready. That way, it can sit for 3-5 minutes while the skillet heats. This allows the gluten to rest.

Chocolate Chip Pancakes
Ingredients
- 1 3/4 cups all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 1/2 cups milk
- 3 tablespoons melted butter, plus more for the griddle
- 2 eggs, separated
- 2 teaspoons vanilla extract
- 1/2 cup mini chocolate chips
Instructions
- Add the flour, sugar, baking powder, and salt to a large bowl. Whisk to combine.
- In another bowl, whisk together the milk, butter, and egg yolks. Place the egg whites in a small bowl.
- Pour the milk mixture into the dry ingredients and mix to combine. (There will still be small lumps – do not over mix.)
- Beat the egg whites with a hand mixer until still peaks form. Add about 1/3 of the egg whites to the batter and stir to combine. Add the remaining egg whites and the chocolate chips and gently fold everything together until no white streaks appear.
- Heat a griddle or skillet over medium-high heat. Grease with butter or nonstick cooking spray.
- Pour about 1/3 cup of the batter onto a hot griddle. Let the pancakes cook until bubbles form, then flip and continue to cook until browned and cooked through.
- Continue with the remaining batter until all of the pancakes are cooked.
