I love the combination of chocolate and mint. We are a house divided, though, when it comes to this flavor combination, though. My boys and I love it, but the husband and daughter do not. But I’m totally ok with that, because it just means more of these Chocolate Mint Cookies for me!!
How To Make Chocolate Mint Cookies
These cookies are just as easy as any other cookies are to make! And they are filled with tons of chocolate and a perfect mint touch. Make sure to check out the full printable recipe below with amounts.
- Start by combining the butter and both sugars in the bowl of a stand mixer. Beat them all together until they are light and fluffy – this should take several minutes.
- Add in the eggs, one at a time. Stop the mixer between each addition to scrape down the sides of the bowl so that everything gets mixed together well.
- Add in the peppermint extract and the vanilla extract. You want to make sure it is peppermint extract, not just mint extract.
- In a separate bowl, whisk together the dry ingredients – the flour, cocoa powder, baking powder, baking soda and salt.
- Add these dry ingredients to the bowl of the stand mixer with the butter mixture. Mix until it is almost all combined.
- Add in the chopped up Andes mints and the chocolate chips. You could also use mint chips instead of the Andes mints.
- Mix just until the dough is combined.
- Drop tablespoon sized balls of the dough onto a baking sheet lined with parchment paper or a silpat liner. I like to use a cookie scoop for this.
- Bake the cookies just until they are set, then let them cool slightly on the baking sheet before removing to cool completely.

Ingredients
- 1 cup butter at room temperature
- 1 cup sugar
- 1 cup packed light brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon peppermint extract
- 2 3/4 cups all-purpose flour
- 1/3 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 6 oz Andes mints chopped
- 6 oz semi-sweet chocolate chips
Instructions
- Preheat the oven to 350ºF.
- Combine the butter, sugar and brown sugar in a large bowl or the bowl of a stand mixer. Beat together until light and fluffy.
- Add in the eggs, one at a time, and beat well, scraping the bowl as needed.
- Add the vanilla and peppermint extract and beat to combine.
- In another bowl, whisk together the flour, cocoa powder, baking soda and salt.
- Add the dry ingredients to the butter/sugar mixture and mix until almost combined.
- Add in the chopped mints and the chocolate chips and continue to beat just until the dough is combined.
- Drop tablespoon sized balls of the dough onto cookie sheets that have been lined with silpat liners or parchment paper, keeping them 2-3 inches apart.
- Bake for about 10 minutes, or until the cookies are set.
- Let the cookies cool on the baking sheet before removing to cool.
