These Chocolate Oatmeal Chippers are cookie bars made using cocoa, oats and chocolate chips.
I am really influenced by bloggers. I make a lot of your food, or am drawn to other blogs or websites because of you. I may not always come back and blog about what I made that you made, but know that you are all an inspiration to me!!
I found these cookies on a blog that found them on another blog that got them from a website, but now – for some reason – I can’t remember where I first saw them. I just remember thinking about how good they sounded, going to the website where the recipe was listed, printing it off and making them a few days later. So if you were the one that turned me onto these, please let me know!!
This is originally a cookie recipe, but I was feeling lazy and just did one big cookie and cut it into squares. It sure does save time when you don’t have those extra few minutes! These aren’t the kind of cookie that will totally blow your socks off, but they are great for a day that you are just craving cookies – especially because the ingredients are pantry staples for most of us!
Chocolate Oatmeal Chippers
Ingredients
- 1 1/4 cups all-purpose flour
- 1/2 cup cocoa
- 1 teaspoon baking soda
- 1 cup butter softened
- 1 cup packed brown sugar
- 1/2 cup granulated sugar
- 1 teaspoon vanilla
- 2 large eggs
- 1 3/4 cups milk chocolate chips
- 1 3/4 cups quick or old fashioned oats
- 1 cup chopped nuts optional
Instructions
- Preheat oven to 350° F.
- Grease 15 x 10-inch jelly-roll pan.
- Combine flour, cocoa, baking soda and salt in medium bowl.
- Beat butter, brown sugar, granulated sugar and vanilla extract in large mixer bowl until creamy.
- Beat in eggs.
- Gradually beat in flour mixture.
- Stir in the chocolate chips, oats and nuts.
- Bake for 25 to 30 minutes.
- Cool in pan on wire rack, then cut into bars.
