This Easy Mango Bread is a quick bread that is perfect for breakfast, brunch, or snack time. Not too sweet but filled with mango chunks, this quick bread is fruity and tropical.

I have been wanting to remake and rephotograph this mango bread for years, and it’s finally time!
If you are a fan of quick breads, this one will be a favorite for you. Not too sweet, but still filled with tons of chunks of mango, this is perfect for breakfast or brunch. Or do what we did and just snack on it at all hours of the day!
Ingredients
- Flour: This is all-purpose flour.
- Sugar: You will need granulated sugar.
- Baking Powder: The baking powder will help the bread to rise.
- Cinnamon: The cinnamon isn’t overpowering, but just gives a bit of spice in the background. It goes really well with the mango!
- Salt: This is to balance the flavors.
- Eggs: I use large eggs.
- Butter: I like the texture that the butter gives this recipe. A lot of times I’ll use a neutral oil for quick breads to give them extra moisture, but the mango keeps this bread super moist.
- Mango: You can use fresh or frozen mango. If using frozen mango, you’ll want to cut the pieces into a smaller dice to be evenly distributed through the bread.
How to Make Mango Bread
STEP 1: Mix all of the dry ingredients together. I do this in a large bowl that I’m going to be mixing all of the batter together in.
STEP 2: In another bowl, mix together the butter and eggs.
STEP 3: Add the wet ingredients to the dry ingredients. Start to mix this together, but not completely.
STEP 4: Add the diced mango to the bowl
STEP 5: Mix in the mango. This batter is thick, so it’s a little harder to mix all together, but try not to overmix.
STEP 6: Line a loaf pan with parchment or grease well. Transfer the batter to the pan. Bake until a tester inserted in the center comes out clean, about 1 hour. This may take longer or shorter depending on your oven.
Tips and Tricks
If you are using frozen mango, you don’t have to wait for it to thaw, but you will want it to thaw enough so that you can cut it into a smaller dice.
You want to make sure that your butter has cooled slightly so that it doesn’t cook the eggs when you whisk them together.
This bread doesn’t rise a lot, so keep this in mind when choosing a loaf pan. My 9×5-inch loaf pan produces a thinner, wider loaf, so I prefer my 1 pound loaf pan that is 8.5×4.5-inches.
I added some shredded coconut to a test batch and it worked well. I didn’t think it added a ton of flavor, which is why I ended up keeping it out, but if you want to add even more tropical flair, feel free to add some in!

Mango Bread
Ingredients
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1 1/2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt

- 1/2 cup melted butter
- 2 cups cubed mango diced small
Instructions
- Preheat the oven to 350ºF. Grease a loaf pan or line with parchment paper.

- In another bowl, mix together the eggs and butter.2 eggs, 1/2 cup melted butter
- Add the butter mixture to the dry ingredients and mix until mostly combined. Add the mango and stir together just until combined.2 cups cubed mango
- Transfer the batter to the prepared loaf pan. (The batter is thick, just spread it as evenly as possible.)
- Bake in the preheated oven for 60 minutes, or until a tester inserted in the middle comes out clean.
- Cool completely before cutting into slices.

I've never tried mango bread. I did eat a fresh (really fresh) mango in Ecuador years ago. Almost doesn't taste like the same fruit to me as how they taste after we get them here.

In Hawaii there's mango season when everyone who has a mango tree gives them away to everyone they know. You end up with bags of the stuff and mango bread is a quick and delicious way to use them all up.
