We love hard boiled eggs, but I always love having lots of ways to use them up!! And as much as I love traditional deviled eggs, I also love to change things up.
And adding spice is just a given since I love the heat, too!
Ingredients:
Eggs: You’ll want to start with hard boiled eggs that have been cooled and peeled. My favorite way to do this is in the Instant Pot, but you can also do a traditional boil.
Mayonnaise: I would not suggest using low fat mayonnaise for this, just because it is a little looser and more watery. You could sub in an olive oil or avocado mayo, as long as you like the flavor.
Jalapeno Peppers: I love flavor the pickled jalapenos bring. You get the salty and the heat. If you like the flavor of fresh jalapenos better, feel free to use those instead. Either way, you will want to make sure the jalapenos are finely minced.
Mustard: This is just regular yellow mustard.
Cumin, Salt, and Pepper: These are all for seasoning. For even more heat, feel free to add in a pinch of cayenne pepper.
Cilantro: The cilantro garnish is optional, but I love the freshness and flavor that it brings.
Tips & Tricks:
- The boiled eggs can be made up to a week in advance, as long as they are left unpeeled. Once peeled, you’ll want to use them within 2 days.
- Fully prepped spicy deviled eggs can be made and stored in the refrigerator for up to 2 days. Just make sure they are covered.
- For spicier eggs, add the full 4 tablespoons of minced jalapenos. For less heat, only add 2 tablespoons.
- You can just spoon the filling into the egg whites, or use a piping bag or a ziplock bag with the corner cut off.
- I don’t like to add the cilantro until just before serving.
