Sometimes, all you need is a good brownie.
A good brownie that is stuffed with an Oreo filling.
Because when you take a good brownie and add Oreos, you know it’s going to be a winning combination.
Whenever I make these Oreo Brownies, they disappear so fast – I know I’m not the only one who loves them!
INGREDIENTS
For the brownies:
- butter
- sugar
- vanilla extract
- eggs
- flour
- cocoa powder
- salt
For the Oreo filling:
- cream cheese
- sugar
- egg
- Oreos
- Cookies and Cream bar
HOW TO MAKE THEM
There are 3 parts to making these brownies. Make the brownie batter, make the filling, and then assemble it all together before you bake them. I don’t even use a mixer – just a couple of large bowls and a baking dish!
Make the brownie layer:
- To make the brownie layer, mix together the melted butter, sugar and vanilla.
- Mix in the eggs.
- Add the flour, cocoa powder, and salt.
- Mix it all until combined and smooth.
Make the cookies and cream filling:
- Beat the cream cheese with the sugar and egg until smooth.
- Chop the Oreos and the cookies and cream bar.
- Add them to the cream cheese mixture.
- Stir it all together.
Assemble the brownies:
- Spread about 2/3 of the brownie mixture into a prepared baking dish.
- Top with the Oreo filling and spread evenly.
- Dollop the remaining brownie mixture over the top of the Oreo filling.
- Gently spread the brownie layer.
- Bake the brownies until cooked through and let cool before cutting.
TIPS AND TRICKS
- I totally think the homemade brownie layer is worth the little extra effort, but you can sub in a boxed mix, if desired. Just make sure you use a family sized mix, not one intended for an 8×8-inch pan.
- The original recipe that I posted here used cookies and cream kisses, but those aren’t as easy to find as the cookies and cream bar, so that substitution has been made. Feel free to use either, though!
- Make sure the brownies are all the way cool before slicing.
- Store any leftovers covered in the refrigerator.
- The recipe is written for 24 servings, but these brownies are quite rich, so you can cut them even smaller, if desired.

Oreo Brownies
Ingredients
Brownies:
- 1 cup butter melted
- 2 1/2 cups granulated sugar
- 1 tablespoon vanilla extract
- 4 eggs
- 1 1/2 cups all-purpose flour
- 1 cup unsweetened cocoa powder
- 1/2 teaspoon salt
Filling:
- 8 oz cream cheese at room temperature
- 1/3 cup granulated sugar
- 1 egg
- 18 chocolate sandwich cookies (Oreos)
- 1 4 oz Hershey’s Cookies and Cream Bar
Instructions
- Preheat the oven to 350ºF. Spray a 9×13-inch baking dish with nonstick cooking spray, or line with parchment paper or foil. (If using foil, spray it with nonstick cooking spray.)
- In a large bowl, combine the melted butter, 2 1/2 cups sugar, vanilla and eggs. Mix well. Stir in the flour, cocoa powder and salt. Mix until fully combined. Set aside.
- In another bowl, combine the cream cheese, 1/3 cup sugar and egg. Beat until well combined and smooth.
- Roughly chop the Oreo cookies and the cookies and cream bar.
- To the cream cheese filling, stir in the chopped Oreos and the cookies and cream bar.
- Spread 2/3 of the brownie mixture into the prepared baking dish. It is thick, so using an offset spatula will help. Drop the cream cheese mixture over the top of the brownie layer, spreading into an even layer. Drop the remaining brownie mixture over the top in dollops, then carefully spread the brownie layer over the top.
- Bake the brownies in the preheated oven until a tester inserted in the middle comes out clean, about 45 minutes.
- Cool completely before cutting into bars. Store any leftovers in the refrigerator.
