These Chocolate Marshmallow Cookies have a rich, brownie-like cookie that is topped with a marshmallow. A chocolate frosting tops the marshmallow, for the perfect cookie for chocolate lovers.

I tend to always go from that treat that has something hidden in the center – the jelly filled donuts, cream filled cupcakes, or molten lava cakes.
I think that’s just one reason I love these Chocolate Marshmallow Cookies so much.
A rich, almost brownie-like cookie is topped with a marshmallow that is covered in a fudgy glaze. That marshmallow gets hidden, so you get a treat when you bite into it. And it’s the best kind of treat!
Think of it like a hot chocolate in cookie form. So delicious, and perfectly acceptable all year long!
Ingredients
- Flour: I have only tested this recipe with all-purpose flour.
- Cocoa Powder: I just use regular, unsweetened cocoa powder.
- Baking Soda: The baking soda keeps the cookies from being overly dense.
- Salt: The salt balances the flavors.
- Butter: I like to use unsalted butter so I have more control over how salty the recipe is.
- Sugar: You will need granulated sugar for the cookies.
- Egg: I always use large eggs.
- Milk: I use 2% milk because that is what I keep on hand, but any milk should work.
- Vanilla: I always suggest real vanilla extract.
- Marshmallows: You want large marshmallows. Not the extra large ones you can find today for roasting, but just the regular, large sized marshmallows.
- Powdered Sugar: The powdered sugar is for the frosting. I don’t usually sift it, but if you are worried about clumps, you can sift the powdered sugar first.
How to Make Chocolate Marshmallow Cookies
STEP 1: Cut the marshmallows in half. I think this is easiest if you take the marshmallow and just press the knife down through the marshmallow. I tried sawing it, but the knife just sticks to the marshmallow. If you press straight down, it will slightly flatten the marshmallow, but you can easily reshape it.
STEP 2: Whisk together the flour, cocoa powder, baking soda, and salt. Set this aside.
STEP 3: In another bowl, or the bowl of a stand mixer, beat the butter and sugar together. You want it nice and fluffy – I’ll usually let it go for 2-3 minutes, scraping the bowl down a few times.
STEP 4: Beat in the egg, milk, and vanilla extract. It may look separated or curdled at this point.
STEP 5: Gradually add in the reserved flour mixture.
STEP 6: Beat the dough until it is combined. The dough will be a bit sticky.
STEP 7: Scoop the dough into balls and place on a parchment lined baking sheet. I like to use a medium cookie scoop. Transfer to the oven and bake for 8-10 minutes.
STEP 8: Remove the baking sheet from the oven and press a marshmallow into each cookie. I like to put them cut side down. Return to the oven for another 2 minutes.
STEP 9: Make the glaze – melt the butter, then whisk in the cocoa powder. Then whisk in the powdered sugar, milk, and vanilla.
STEP 10: When the cookies are cool, spread the glaze over the tops of the cookies, trying to completely cover the marshmallow.
Tips and Tricks
I like to rotate the baking sheet halfway though the baking time to ensure that these cookies bake evenly.
Make sure to return the cookies to the oven after the marshmallow has been added. Not only does it melt the marshmallow slightly so that it sticks to the cookie, but it also slightly changes the texture of the marshmallow.
Storage Instructions
We store these cookies in an airtight container. They will be good for about 3 days. The good thing about these cookies is that they stay fairly fresh as long as they are covered.
The unbaked cookie dough will freeze well for up to 3 months. We have not tested freezing these cookies finished, and am unsure of how the marshmallow will be after freezing, but we are guessing the cookies will freeze just fine!

Chocolate Marshmallow Cookies
Ingredients
Cookies:
- 2 1/4 cups all-purpose flour
- 3/4 cup cocoa powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter softened
- 1 cup granulated sugar
- 1 large egg
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 12 large marshmallows
Frosting:
- 6 tablespoons butter
- 1/4 cup plus 2 tablespoons cocoa powder
- 3 cups powdered sugar
- 1/4 cup plus 2 tablespoons milk
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 375ºF. Line 2 baking sheets with parchment paper.
- Cut each of the marshmallows in half horizontally.
- In a bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.
- In the bowl of a stand mixer, or a large bowl if making by hand, beat the butter and sugar together until it is light and fluffy, at least 2 minutes. Add in the egg, milk, and vanilla extract.
- Gradually add in the flour mixture and beat until it is completely combined.
- Us a 1 3/4-inch cookie scoop to make balls of dough and place them on the prepared baking sheets, at least 2 inches apart.
- Bake, one sheet at a time, rotating halfway through the cook time, for about 8-10 minutes, or until the cookies are set. Remove from the oven and immediately place a marshmallow half on top of the cookie. Return to the oven for 2 more minutes. Remove from the oven and allow the cookies to cool completely.
- To make the frosting, melt the butter in a medium saucepan. Once melted, remove from the heat and whisk in the cocoa powder, followed by the powdered sugar, milk, and vanilla. Whisk until smooth.
- Spread about 1 tablespoon of the frosting over the top of each cookie, covering the marshmallow.
- Allow the cookies to set up completely before serving.
