I often steer clear of chicken breast recipes, simply because it’s so easy for them to turn out dry and flavorless.
Well, this Crunchy Mayo Chicken is anything but that.
I know a lot of people are mayonnaise haters, but even if you are, I would suggest trying this recipe. The mayo really keeps the chicken moist and tender. I have a similar recipe, but with salmon. And that recipe is one of my favorites. The magic that the mayonnaise works in that recipe works in this chicken recipe, as well.
Add in the crunchy topping, and this is a winning chicken dinner. And bonus that it only takes about 40 minutes to get it on the table!
Ingredients
- Chicken: You need 4 medium sized chicken breasts. You want them to all be similar in size – about 8-10 ounces each.
- Mayonnaise: I have only made this with full fat mayonnaise. I’m guessing it would work with low fat mayonnaise, as well.
- Mustard: I use Dijon mustard, but I think any stone ground or brown mustard would be delicious.
- Sour Cream: You just need a little bit of sour cream. This adds to the creaminess.
- Seasoning: For seasoning, you need garlic powder, seasoned salt, and pepper.
- Breadcrumbs: For the crunchiest topping, you’ll want to use panko breadcrumbs. These are pretty easy to find at most grocery stores.
- Parmesan: I like to use freshly grated parmesan.
- Parsley: I like adding parsley at the end to add some freshness.
How to Make Crunchy Mayo Chicken
STEP 1: Working with one chicken breast at a time, take a sharp knife and cut it in half horizontally. This will give try 6 thinner pieces of chicken. Place the chicken in a single layer on a baking sheet.
STEP 2: Mix the mayonnaise, mustard, sour cream, garlic powder, seasoned salt, and pepper in one bowl. In another bowl, mix the panko breadcrumbs and the parmesan cheese.
STEP 3: Take the mayonnaise mixture and spread it evenly over the pieces of chicken. You want to get it to the edges of each piece.
STEP 4: Take the breadcrumb mixture and sprinkle it evenly over the top of each piece of chicken. Bake the chicken until it is cooked through. This will only take about 15-20 minutes because he chicken is thin. Serve topped with parsley.
Tips and Tricks
I like to turn on the broiler for the last minute or so, just to make sure the chicken browns up nicely.
Feel free to change up the spices. Add more of your favorites to change things up.
The leftovers don’t stay as crispy, but we actually enjoyed them reheated in the air fryer.

Crunchy Mayo Chicken
Ingredients
- 3 chicken breasts 8-10 oz each
- 2/3 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon sour cream
- 1 teaspoon garlic powder
- 1/2 teaspoon seasoned salt
- 1/2 teaspoon pepper
- 1/2 cup panko breadcrumbs
- 1/2 cup freshly grated parmesan cheese
- Fresh parsley for serving
Instructions
- Preheat the oven to 375ºF.
- Take the chicken breasts, and using a sharp knife, cut them in half horizontally, making 6 thinner pieces of chicken. If you have any that are thicker than the others, cover in plastic wrap and use a meat mallet to flatten the breast.3 chicken breasts
- Pat the chicken dry with paper towels, and transfer to a baking sheet. (I like to line it with parchment paper.)
- In a bowl, combine the mayonnaise, mustard, sour cream, garlic powder, seasoned salt, and pepper.2/3 cup mayonnaise, 1 tablespoon Dijon mustard, 1 tablespoon sour cream, 1 teaspoon garlic powder, 1/2 teaspoon seasoned salt, 1/2 teaspoon pepper
- In another bowl, combine the panko with the parmesan cheese.1/2 cup panko breadcrumbs, 1/2 cup freshly grated parmesan cheese
- Spread the mayonnaise mixture over the top of each piece of chicken, making sure to cover the whole surface. Sprinkle the panko mixture evenly over the top.
- Transfer the baking sheet to the preheated oven and bake until the chicken is cooked through, 15-20 minutes.
- Serve topped with fresh parsley.Fresh parsley

I almost always use mayo to dip my chicken in when I create a breaded chicken! It makes for the most fail proof, juiciest chicken ever! Also, one of my favorite ‘go-to’ tilapia recipes is also coated in mayo, a chili-lime mayo! PS- I can’t wait to see that side dish recipe! Looks crazy good!
