This time of the year is always the hardest. Is it Spring, or is it still Winter? I know that the calendar says winter, but you get these days of blue skies and warming temperatures, and you can sense spring in the air. You decided to put your winter coat and boots away.
And then you wake up to snow.
At least if you live in Utah, like I do, this is what happens. Every year it’s the same thing – I should really know better by now. I’m ready for spring, but Old Man Winter hasn’t quite finished his job yet.
As much as I am willing Spring to show her face, I’m still feeling warm and comforting foods. Like this Creamy Slow Cooker Tomato Soup with Gnocchi. (But let’s be honest as well – I would gladly eat soup in 90 degree weather, I love it so much!!)
I actually came up with the idea for this soup because I have been utilizing our slow cooker like crazy lately, and I was desperate for more recipes. We are on a schedule right now where we have church in the afternoons on Sunday, and by the time we get home, it’s already dinnertime. So we have gone through many of our favorite slow cooker recipes, but I wanted something new. We are a soup loving family. We are a gnocchi loving family. So this slow cooker tomato soup was a no brainer.
This soup is simple, creamy, and straight up delicious. We all devoured our bowls at dinnertime and wanted to go back for more. It’s filling, as well, because of the gnocchi, so I simply served it with some rolls and dinner was as simple as that.
Even if Springtime starts to come on strong now, I may still be making this Creamy Slow Cooker Tomato Soup with Gnocchi I loved it so much!!

Creamy Slow Cooker Tomato Soup with Gnocchi
Ingredients
- 1/2 tablespoon olive oil
- 1 cup chopped onion
- 1 teaspoon Italian seasoning
- 4 cups chicken stock
- 2 (14.5 oz) each cans diced tomatoes
- 1 (15 oz) can tomato sauce
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 8 oz cream cheese cut into squares
- 1 (16 oz) package gnocchi uncooked
- basil for serving
Instructions
- Heat the olive oil in a skillet over medium heat. Add the onion and cook until translucent, about 5 minutes. Stir in the Italian seasoning.1/2 tablespoon olive oil, 1 cup chopped onion, 1 teaspoon Italian seasoning
- Pour the onions into a slow cooker. Stir in the chicken broth. Add the diced tomatoes and the tomato sauce. Stir in the salt and pepper, then cover and cook on low for 3-4 hours, until completely heated through and the flavors have had some time to meld.4 cups chicken stock, 2 (14.5 oz) each cans diced tomatoes, 1 (15 oz) can tomato sauce, 1/2 teaspoon salt, 1/4 teaspoon pepper
- Add the cream cheese and the gnocchi to the slow cooker. Turn the heat to high and cook until the cream cheese is melted, 30-45 minutes. Stir the cream cheese into the soup with a whisk, if necessary.8 oz cream cheese, 1 (16 oz) package gnocchi
- Serve hot. Top with basil, if desired.basil
