Looking for one of the prettiest summer desserts?
It’s a fruit pizza!
Not only is this a beautiful dessert, but it’s easy enough for anyone to make – even people that are challenged when it comes to decorating (like I am!)
When I first started testing for this fruit pizza, I tried to reinvent the wheel. But after many failed attempts, I decided to use my tried and true sugar cookie recipe for the crust, and it was perfect!
I love this dessert because you can change up the fruits and really make this with any in-season fruit. And it’s not a heavy dessert, so it’s perfect for the summer.
Ingredients
- Butter: I like to use unsalted butter.
- Sugar: You will need granulated sugar for the cookie base, and powdered sugar for the frosting.
- Eggs: Have these at room temperature for the best results.
- Milk: You only need a little bit of milk. I use 2%, but really, you could use whole or skim or even a milk alternative like almond milk or coconut milk.
- Baking Powder: This helps the cookie base to have great texture and keeps it from being compact.
- Vanilla: You need vanilla for both the base and the frosting. I like to use real vanilla extract.
- Salt: Never underestimate the power of salt! It’s great for balancing flavors.
- Flour: You’ll want to use all-purpose flour.
- Cream Cheese: I use regular cream cheese, but reduced fat cream cheese should work.
- Fruit: This is where you can get creative and use your favorite fruits, or fruits that are in season. I do suggest that you use fruits of different colors and sizes.
How to Make Fruit Pizza
Start by making the dough for your sugar cookie base. Cream the butter and sugar, then add in the eggs.
Add the milk, baking powder, vanilla, and salt. Then start adding in the sugar 1/2 cup at a time. You want the dough to still be a little bit soft, but it should not be sticky.
Wrap the dough and refrigerate it for 20-30 minutes.
Take the dough and press it into a large pizza pan. Make sure and take it up onto the edges a bit so that it will hold in the toppings. Bake this until it is set up and golden brown. Let the crust cool.
Once the crust is baked and cooled, make the frosting by beating the cream cheese and butter together. Add in the vanilla and salt, then slowly add in the powdered sugar.
Decorate the pizza by spreading the frosting over the crust, then arranging the fruit over the top.
Tips and Tricks
I know that a 15″ pizza pan is not something that everyone has on hand. But they are inexpensive – I picked mine up at the local big box store for $5. Or you can buy them online for under $10. If you want to make this with a pan you already have on hand, the closest substitution would be a half sheet pan (12×16-inches). The crust will be thinner on the sheet pan, though.
If you want to make this free-form, without a pan, I suggest making the edges thicker than the center. If the edges are thinner, they will cook faster and you will end up with edges that are crispy.
You can also make this into individual fruit pizzas! Simply roll the dough out and cut it into circles. Then each individual pizza can be frosted and decorated.
You can make the crust ahead of time, and make the frosting ahead of time. But you don’t want to assemble the pizza until shortly before you are ready to serve it. The fruit will dry out and the crust will get soggy.

Fruit Pizza
Ingredients
Cookie Base:
- 1/2 cup butter at room temperature
- 1 cup sugar
- 2 eggs
- 1 tablespoon milk
- 2 teaspoons baking powder
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 2 1/2 cups all-purpose flour
Topping:
- 4 oz cream cheese
- 2 tablespoons unsalted butter
- 1 teaspoon vanilla extract
- Pinch of salt
- 1 1/2 cups powdered sugar
- Assorted fruit
Instructions
- In a large bowl (or the bowl of a stand mixer) cream the butter and the sugar together until they are lighter in color. Add in the eggs, one at at time, mixing until combined.
- Mix in the milk, baking powder, vanilla, and salt. Start adding in the flour, 1/2 cup at a time, until you have a dough that is soft, but not sticky.
- Remove the dough from the bowl and wrap in plastic wrap. Refrigerate for 30 minutes.
- Once the dough has been refrigerated, heat the oven to 350ºF. Spray a 15-inch pizza pan with nonstick cooking spray.
- Remove the dough from the plastic wrap and press the dough into the pizza pan, evening it out as much as possible. Bake in the preheated oven until the dough is slightly set up and golden brown, about 18 minutes. Remove from the oven and let it cool completely.
- When the crust is cooled, make the topping. In a bowl, beat the cream cheese and the butter together. Beat in the vanilla and the salt. Start slowly adding in the powdered sugar until you have a thick, but spreadable frosting.
- Spread the frosting in an even layer over the crust.
- Decorate the top with fruit.
