Grilled Chicken Quesadillas

I am a carb girl through and through. I love anything wrapped in bread, in a bun, or even a tortilla.
So a tortilla made from bread dough? Count me in!
Yes, these grilled chicken quesadillas are a little out of the norm. And it does take a little time to cook up the tortillas. But they are so delicious, and such a fun way to change things up a bit that everyone really has to try them! You are basically taking the frozen roll dough (that you can buy in the freezer section of your grocery store), letting them thaw a bit, then flattening them out and cooking them like a tortilla. A pretty fun idea, right?
What kind of tortillas do you use for quesadillas?
We have quesadillas quite often at our house. The majority of the time, they are made with regular flour tortillas. In fact, most of northern Mexico uses flour tortillas for quesadillas. But most places actually use corn tortillas. I have used corn tortillas before – these Mushroom Spinach Quesadillas – but we really do mainly grab for flour.
These tortillas that are made from frozen roll dough are definitely not traditional, but they make the tortilla almost like a thin flatbread. It’s definitely a great way to change things up.
How to make Grilled Chicken Quesadillas
To make the tortilla, you will take 2 thawed rolls and combine them, then flatten them into a circle. This will be your tortilla. You cook this dough in a pan first, to cook the dough through. Then you load in all the goodies – chicken, salsa, black beans, corn, cilantro and cheese, place a second tortilla on top, and then grill them on a grill or grill pan until the tortilla is a little bit crisp and the cheese is melted. Easy peasy!

Grilled Chicken Quesadillas
Ingredients
- 32 frozen dinner rolls such as Rhodes, thawed to room temperature
- 3 cups chopped cooked chicken, seasoned with salt and lemon pepper
- 2 cups prepared salsa
- 1 cup canned black beans drained and rinsed
- 1 cup frozen corn thawed
- 1/2 cup chopped cilantro
- 1/4 cup butter melted
- 2 cups grated cheddar cheese
Instructions
- Spray a counter lightly with nonstick cooking spray. Combine 2 of the rolls together, then roll into an 8-inch circle. (The dough will be thin.)
- Place a small skillet over medium heat and spray with nonstick cooking spray. Place the rolled rolls in the skillet and cook for 1-2 minutes on each side, or until lightly browned. Repeat with the remaining rolls to make a total of 16 flatbreads.
- In a large bowl, combine the chicken, salsa, black beans, corn and cilantro.
- Heat a grill or grill pan to medium heat. Butter one side of a flatbread with the butter. Sprinkle the other side with some cheese, top with some of the chicken mixture, more cheese, then another flatbread. Brush the top of the second flatbread with the melted butter.
- Grill for 3 minutes on each side, or until the cheese is melted and the flatbread is browned. Repeat with the remaining ingredients to make a total of 8 quesadillas.
