Can’t it just be summer forever??? I’m always grateful to welcome in fall and the cooler temperatures. And I’m itching to burn my fall candles. But I just can’t quit the summer produce yet. This is my favorite time of year – food wise – as the corn and tomatoes and zucchini and plentiful and good. And those Utah peaches are coming off the trees – this is most definitely my favorite time of the year for food.
Even though we don’t have our yard in yet, and the garden didn’t happen this year (crossing my fingers it will be good to go next year!) I have been hitting up the local farm stands to fill up on my favorite summer produce. And we have gone through so much corn this year. My husband usually can’t get enough of it, but I think even he is starting to question how often corn is on the menu. 😂
But I’m not quitting just yet. Especially when corn recipes like this Grilled Corn on the Cob with Smoky Butter are on the menu!
I originally made this recipe back in 2008, alongside these Spice-Rubbed Pork Chops with Mustard Bacon Barbecue Sauce. I actually have a very bad memory, but I can remember the first time I made this corn and how I just fell in love.
Grilling corn is one of my very favorite ways to prepare it, but a lot of the time I will just shuck the corn and grill it directly on the grill. I decided to try something new this time, and I soaked the corn and then grilled it in the husks. For half of it, I peeled back the husks, removed the silk, then put the husks back upright. The other half I didn’t bother to go through that extra step, and just grilled it as is. And honestly, I liked it better when I didn’t peel back the husks. The silk came off super easy, the husks didn’t fall off all over the place in my grill, and the corn stayed covered better – which meant more moisture stayed in. So yay for the lazy way being the best way!
Now let’s talk about that smoky butter. While corn is great with regular butter, you will be blown away with how much flavor this smoky butter brings. It’s super easy to make, and really transforms your normal corn on the cob.

Grilled Corn on the Cob with Smoky Butter
Ingredients
- 6 ears corn
- 2 tablespoons butter at room temperature
- 1 teaspoon grated lime zest
- 1 teaspoon honey
- 1/2 teaspoon salt
- 1/2 teaspoon ground cumin
- 1/4 teaspoon smoked paprika
Instructions
- Heat a grill to medium heat.
- Cut the very tops off of the corn cobs (mostly just the excess silk and husks). Fill a large bowl with cold water and 1 tablespoon salt. Add the corn and let it soak for 10 minutes.
- Remove the corn from the water. Place the corn on the grill and cook for about 20 minutes, turning the corn every 5 minutes.
- While the corn is cooking, combine the butter, lime zest, honey, salt, cumin and paprika in a small bowl.
- When the corn is done cooking, remove from the grill and carefully remove the husks and silk from the corn. Brush the butter mixture evenly over the corn. Serve immediately.

Her recipe different from GRILLED GRILL WITH SMOKY BUTTER looks like it gives in a very tasty food I have never done that way, nor had I seen, but the end result looks very good and appetizing I will make for the crinaçda who loves corn here.
