I have a little thing for grilled corn. I don’t know what it is, but I can’t seem to get enough of it. My grill has seen more corn this summer than anything else.
I’ve also had a thing for quesadillas lately. Not just your cheese filled tortillas, but cheese filled tortillas with lots of other goodness.
Like these Shrimp Quesadillas with Chorizo. Or Roasted Veggie Quesadillas.
Or how about like this grilled corn salsa. The salsa was good enough to eat on it’s own, but add it to the center of a quesadilla, and it’s a whole new ballgame.
This, my friends, is a quesadilla done right.
I didn’t even serve mine with any sort of dipper or sauce – they were good just straight up. But I think a side of guacamole would be fantastic.
Don’t let summer pass you by without grilling up some corn and making this Grilled Corn Quesadilla Recipe. They just might end up being a summer favorite! Especially since they use some of that great summer garden produce.
How to make this Grilled Corn Quesadilla Recipe
Start by heating up your grill to medium high heat. While the grill is heating up, shuck your corn and remove all of the silk. Grill the corn, turning it often, until it is charred. I like to really char my corn for this recipe – more than if I were going to just eat the corn. I love the extra smoky flavor it brings!!
Once your corn is cooked, cut the kernels from the cobs. Combine that corn with chopped peppers, green onions, cilantro, some spices and a bit of lime juice. Resist every urge to just eat the corn salsa plain. 🙂
Heat a large skillet, spray it with nonstick cooking spray, then put a tortilla down in the skillet. Add some cheese, then some of the corn salsa, then fold the tortilla over.
Cook until both sides are brown and crispy and the cheese is melted through, flipping once. (Flip carefully – the filling comes out easily!)

Grilled Corn Quesadilla Recipe
Ingredients
- 2 ears fresh corn
- 1/2 cup chopped red pepper
- 3 chopped green onions
- 2 tablespoons chopped cilantro
- Juice from 1 lime
- 1/2 teaspoon salt
- 1/4 teaspoon chili powder
- 6 8-inch flour tortillas
- 2 cups shredded Monterey Jack cheese
Instructions
- Heat a grill to medium-high heat. Shuck and clean the corn and grill the corn until it is charred. Let cool, then cut the kernels from the cobs.
- In a bowl, combine the corn, bell pepper, green onions, cilantro, lime juice, salt and chili powder.
- Heat a large skillet over medium heat. Spray with nonstick cooking spray and lay one of the tortillas in the skillet. Add one-sixth of the cheese to half of the tortilla and then top the cheese with one-sixth of the corn mixture. Fold the tortilla over. Cook until browned on the bottom, then flip over to brown the other side and finish melting the cheese. Remove from the skillet and cut into wedges.
- Repeat with the remaining tortillas, cheese, and filling.

Blogging is a lot of hard work! I only started trying to post 5 days a week a few months ago and some weeks it is a struggle! I can’t believe you have done it for so many years! But since your little family is expanding you should take more time for yourself and to focus on them. I think alternating the weeks for the two features are a perfect solution and hopefully will help you be able to balance. Oh and these quesadillas look perfect! We have had so wonderful Texas corn this year and I am gobbling it up like crazy too!
