These Peppermint Rice Krispie Treats are the ideal size to include on cookie plates, and the peppermint kick makes them perfect for the season!
Last week, I posted about McCormick and their partnership with Kim Ima – the author of The Treats Truck Baking Book. And today, I’m back with another Christmas treat from McCormick and Kim Ima!!
One of the things I love about the Christmas season are all of the amazing treats. Everything from cookies to fudge to homemade caramels – I don’t think I could pick a favorite!! And one of the best things is getting to share all of your Christmas goodies! McCormick and Kim Ima agree – the holidays are all about sharing. Sharing food, sharing memories – and my favorite is sharing memories with food!! Kim Ima partnered up with McCormick this year to create some great treats that are perfect for sharing, which includes these little Peppermint Rice Krispie Treats. These little squares are perfect for adding to cookie plates – not only because of their size, but because the addition of peppermint and white chocolate makes them a perfect festive treat!
Peppermint Rice Krispie Treats
Ingredients
- 4 tablespoons butter
- 10 ounces mini marshmallows
- 6 cups crispy rice cereal
- 1/4 teaspoon McCormick® Pure Peppermint Extract
- 1/3 cup white chocolate chips
- 3 coarsely chopped candy canes
Instructions
- Grease an 8x8 or 9x9-inch baking dish with one tablespoon of the butter.
- In a large pot over low heat, melt the remaining butter. Add the marshmallows and stir until the marshmallows are melted and smooth. Remove from the heat, and stir in the peppermint extract.
- Stir in the crispy rice cereal, the white chocolate chips and 2 of the crushed candy canes. Pour the mixture into the buttered dish. Using buttered hands, press evenly into the pan. Garnish with the remaining candy cane.
- Let sit at least 15 minutes. Cut into 5 rows of 5, and once you remove it from the pan, cut the pieces to half the thickness to make little squares.
