Ooey and gooey, this Caramel Marshmallow Popcorn is coated with a marshmallow and caramel mixture, making it addictive and delicious. It’s easy to make, and perfect for movie time or any time you need a snack to share.

There is rarely a time when I will turn down popcorn. Coat it in caramel and marshmallow? I’m a goner.
I grew up on marshmallow popcorn, and was addicted to caramel popcorn in college. This recipe combines the two for an even more addictive popcorn!
But don’t blame me if you eat the whole bowl of it. Because you probably will. It’s really that good.

Ingredients
- Popcorn: I like to use air popped popcorn, or any plain popcorn. You can use microwave popcorn, but you’ll want to make sure it’s not buttered popcorn.
- Brown Sugar: This is for the caramel popcorn. I use light brown sugar.
- Butter: I use unsalted butter because that is what I usually have on hand, but salted butter will totally work here, as well.
- Corn Syrup: The corn syrup not only helps with the texture of the popcorn, but it keeps the sugar from crystalizing.
- Marshmallows: My biggest tip with the marshmallows is to make sure you are using fresh marshmallows. I like to use mini marshmallows because they. melt into the caramel faster.
- Vanilla: A little bit of vanilla extract at the end will add great flavor.
How to Make Caramel Marshmallow Popcorn
STEP 1: Combine the brown sugar, butter, and corn syrup in a saucepan. Cook this all together until the butter melts.
STEP 2: Add the marshmallows to the saucepan.
STEP 3: Continue to cook, stirring constantly, until the marshmallows are mostly melted. You want to make sure to stir the whole time so that it doesn’t burn.
STEP 4: Remove the pot from the heat. Stir in the vanilla extract.
STEP 5: Place the popcorn in a large bowl. Pour the hot caramel marshmallow sauce over the popcorn.
STEP 6: Working quickly, stir the sauce into the popcorn gently, making sure everything is coated.
Tips and Tricks
I have a large stainless steel bowl that I love to use to mix this popcorn. I have one similar to this bowl and I actually use it way more than I ever thought I would.
This caramel marshmallow popcorn stays soft and gooey. I will still store it in an airtight container, but it never lasts long at our house!
I sometimes like to add a little bit of sea salt to counter the sweetness.
Make sure you remove any popcorn seeds before adding the caramel marshmallow sauce. There’s nothing worse than biting into a hard popcorn seed!

Caramel Marshmallow Popcorn
Ingredients
- 12 cups popped popcorn
- 1 cup brown sugar
- 1/2 cup butter cut into pieces
- 2 tablespoons light corn syrup
- 3 cups mini marshmallows
- 1 teaspoon vanilla
Instructions
- Place the popcorn in a large bowl.12 cups popped popcorn

- Pour the caramel marshmallow mixture over the popcorn and gently stir until the popcorn is coated.

Oh My! I jus made this and have to make myself walk away so that there’s some left for our party! I altered it slightly to make it dairy free. Instead of butter I did half Earth Balance and 1/2 coconut oil. So delicious! My waistline needs me to lose this recipe, but you can bet I’ll be keeping it in a very safe place to enjoy for years to come!

I have yet to find a go-to caramel popcorn so I am excited to try this marshamallow caramel recipe! It looks addictive. You mention that The topping stays soft. Would that make left over popcorn mushy? Can you store this popcorn for 2 or 3 days? Not that it would last that long in my house but I am thinking of mailing it.
