What is your go-to meal when you don’t have something planned, or when you don’t feel like cooking what you had planned?
Mine? Pizza.
And lately, it seems like we’ve been eating a lot of pizza!!
Maybe it’s the fact that we’ve been going off menu a lot lately. Or maybe it’s because I just really like pizza. Or maybe it’s because my family loves it when I make pizza, and I know it’s something that all of us will love.
Regardless, I’m not complaining, because I love making pizza. And this one is a doozy.
This pizza is pure comfort. Big, homemade meatballs are put on top of a pizza that gets covered in cheese, and then baked until hot and melty. Really, what’s not to love?
Ingredients
- Ground Beef: I like to use a ground beef that is not too fatty, but not too lean. If it is too lean, the meatballs will be dry and won’t have a lot of flavor.
- Breadcrumbs: I just used store bought breadcrumbs this time, but I have used homemade before successfully, as well.
- Parmesan: This is best if you use freshly grated parmesan.
- Worcestershire Sauce: This gives the meatballs some great depth to the flavors.
- Egg Yolk: The egg yolk will bind everything together.
- Seasonings: The first time I posted this recipe, the meatballs were made from a packaged spice mixture. But these are all spices I keep on hand, so making my own spice mix is so much easier.
- Pizza Dough: I like to use my homemade pizza dough, but you can use store bought as well.
- Pizza Sauce: I also like to use homemade pizza sauce. But you can use whatever is easiest for you.
- Red Onion: The red onion adds flavor and texture.
- Cheese: For topping the pizza, I use a combination of mozzarella and parmesan. Again, this is best if you use freshly grated cheese.
- Basil: The basil is optional, but adds great freshness to the finished pizza.
How to Make Meatball Pizza
Start with making the meatballs. Combine all of the meatball ingredients gently, then divide it into 8 equal pieces. Roll each of those into a ball.
Bake on a lined baking sheet until they are cooked through. Once slightly cooled, cut each meatball in half.
To assemble the pizza, roll or stretch the dough into a 12-inch circle.
Spread the pizza sauce over the top, then top with the onions and then the halved meatballs.
Finish the pizza by adding both cheeses. Bake until the crust is golden and the cheese is melted.
Before serving, add the fresh basil.
Tips and Tricks
Make sure you don’t over bake the meatballs because they will cook a little longer once they are added to the pizza.
You can use store bought meatballs, but it really is worth the extra few minutes of work to make them from scratch.
Leftovers should be stored in the refrigerator. My favorite way to reheat pizza is in the airfryer, but you can also use the oven, microwave, or even the stove top.
