And while my kids are always happy with cheese or pepperoni, I do love to switch things up a bit .
Who wants boring pizza when you can turn your pizza into something spectacular?
And this Mediterranean Pizza is spectacular.
This pizza literally comes together in minutes once you have your pizza dough. And I have been so in love with Mediterranean flavors lately – it was only natural that they would eventually make their way onto a pizza in our house.
No more boring pizza night!!
Ingredients
- Pizza Dough: I like to use my homemade pizza dough, but feel free to use store bought if you’d like. Or if you have time to prep the day before, try this artisan pizza dough.
- Pesto: You can use store bought or homemade pesto.
- Artichokes: I like to buy the canned quartered artichokes, and then I will cut those in half vertically.
- Olives: My favorite olives to use for this pizza are kalamata olives.
- Sun-Dried Tomatoes: You can use regular sun-dried tomatoes, or I like to use the sun-dried tomatoes that are packed in oil. You will want to drain the oil, first.
- Red Onion: I prefer sliced red onions, but diced red onions will work, too.
- Cheese: Feta cheese is a must for me on this pizza. I also like to add some parmesan.
- Arugula: The fresh arugula on this pizza really brings an extra element of flavor and texture to this pizza.
- Olive Oil: Before adding the arugula to the top of the pizza, I like to rub a little bit of olive oil into it. I just use my fingers and gently massage the oil into the arugula.
How to Make Mediterranean Pizza
Stretch or roll your dough out, then spread the pesto over the dough.
Add all of your toppings except for the arugula. Bake the pizza until the crust is golden brown.
While the pizza is baking, combine your arugula and the olive oil. I also like to add a little bit of salt.
Once the pizza has finished baking, add the arugula to the top and serve.
Additions and Substitutions
While I love this combination of toppings, you can definitely switch things up. Here are some suggestions for other toppings you can switch in or add.
- Roasted red peppers
- Sliced grape tomatoes
- Hummus
- Parsley
- Spinach
- Mushrooms
- Chickpeas
Tips and Tricks
The topping ingredients aren’t really easy to measure, so feel free to use what feels right to you. Or use more of one ingredient you love and less of another.
Want dinner in a hurry? Use a flatbread instead of pizza dough.
Replace the pesto with olive oil infused with garlic for another variation.
If you have leftovers, you can remove the arugula before storing, if desired. I just leave it on because the arugula holds up pretty well, but if you reheat the pizza, it will wilt down some.

Mediterranean Pizza
Ingredients
- 1 pound pizza dough*
- 3 tablespoons pesto
- 1 cup quartered artichokes halved
- 1/2 cup kalamata olives halved
- 1/3 cup sun-dried tomatoes in oil drained
- 1/4 cup sliced red onion
- 1/3 cup crumbled feta cheese
- 2 tablespoons freshly grated parmesan cheese
- 1 cup arugula
- 1 teaspoon olive oil
Instructions
- Preheat the oven to 450ºF. (If using a pizza stone, place it in the oven and preheat for at least 30 minutes.)
- Stretch or roll the pizza dough out into a 12” circle. (See my pizza dough post for all my tips and tricks.)
- Spread the pesto over the crust, then top with the artichokes, olives, oil, and red onion. Sprinkle both cheeses over the top.
- Transfer the pizza to the oven and bake until the crust is golden, about 10 to 12 minutes.
- While the pizza is cooking, rub the olive oil into the arugula. Season with salt.
- Top the pizza with the arugula before serving.
