If you follow me on Instagram stories, a couple of weeks ago I mentioned that I’m really struggling with dinner this summer. It’s not that I don’t want to cook (although this heat does zap all of my motivation some days), but we just tend to be on the go all the time. Dinner has definitely taken a back seat.
I’m really trying to change that, because I do know how important a home cooked dinner around the table is, but that doesn’t change the fact that most days we are walking in the door at 5pm, or digging ourselves out of a project right as it’s time to eat. I have been scouring my archives for dinners that can be thrown together in a few minutes, and this Mexican Hot Dog recipe just jumped right out at me.
First of all, you must know that I love hot dogs. I proudly admit it. I have quite a few different variations here on the blog – this was actually the start of a hot dog week back when it was originally published in 2012. And I don’t say this lightly – but this Mexican Hot Dog recipe just very well may be my very favorite of all the hot dog recipes here on Taste and Tell. I’m pretty sure my husband would agree, as well, because he can’t stop talking about them, and he’s not normally as enamored with hot dogs as I am. 🙂
Bonus – this easy summer dinner recipe can be on the table in well under 30 minutes. In fact, we were eating in 20 minutes – that’s my idea of the perfect summer dinner!
Mexican Hot Dog toppings:
The hot dog toppings are the star in this recipe!! My favorite part is the chipotle mayonnaise, which is just mayonnaise mixed with minced chipotles in adobo. If you’ve never used chipotles in adobo, they are dried, smoked jalapeños that are put in this smoky red sauce. I use them in everything from breakfast to appetizers to Instant Pot favorites. For this recipe, I take some of the peppers – you can remove the seeds if you want less heat – and some of the sauce from the can. Mince it all up and stir it all into some mayonnaise for this easy hot dog topping.
I also top my hot dogs with diced avocado, cilantro and cotija cheese. You could also add a pico de gallo, fresh jalapeños slices, or finely chopped red onions.

Mexican Hot Dog
Ingredients
- 1/2 cup mayonnaise
- 3 chipotles in adobo minced (remove seeds for less heat) plus 1 tablespoon adobo sauce
- 8 beef hot dogs
- 8 hot dog buns
- 1 large avocado diced
- 1/3 cup crumbled cotija cheese
- Fresh chopped cilantro
Instructions
- In a small bowl, combine the mayonnaise and the minced chipotles and adobo sauce. Set aside.
- Grill the hot dogs on a grill until they are cooked through.
- Open the buns and grill the inside part of the bun down until toasted.
- To assemble the hot dogs, place a hot dog on each of the toasted buns. Top with the chipotle mayonnaise, avocado, crumbled cotija and chopped cilantro.
