Gooey chocolate is sandwiched between two layers of oatmeal cookies in these decadent Oatmeal Fudge Bars.
I don’t know what has come over me. Normally, if I’m craving dessert, I’ll choose something fruity, or caramel, or vanilla. While I like chocolate, for some reason, it’s not usually my first choice.
But lately, I can’t get enough chocolate. Everything from No Bake Cookies to Homemade Brownies to Double Malt Brownies.
And I’ve got more chocolate today. I was actually wanting to make cookies one day, but nothing sounded good. I know – something is really wrong with me!! But then I came across these bars, and I knew I wanted to try them.
These may very well become a favorite. A layer of oatmeal cookie bar, topped by a gooey, creamy chocolate center, then layered with another oatmeal cookie bar. These things are amazing. And I love that the filling stays soft – it never hardens up like a I thought it would have. So these are creamy and soft and rich no matter when you eat them!
These bars are great to give away or take to a potluck as well. That is – if you don’t eat them all first!!

Oatmeal Fudge Bars
Ingredients
- 2 cups packed brown sugar
- 1 cup plus 2 tablespoons butter softened (divided)
- 2 teaspoons vanilla extract divided
- 2 eggs
- 3 cups quick-cooking oats raw
- 2 1/2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon salt divided
- 1 14-oz can sweetened condensed milk
- 1 12-oz package semi-sweet chocolate chips
Instructions
- Preheat the oven to 350°F. Line an 8x12x1 inch sheet pan or a 9×13-inch baking dish with parchment paper or spray with nonstick cooking spray. Set aside.
- Combine the brown sugar and 1 cup of the butter and beat until light and fluffy. Add in 1 teaspoon of the vanilla and the eggs and beat until combined. In another bowl, combine the oats, flour, baking soda and 1/2 teaspoon of the salt. Stir the dry ingredients into the butter/sugar mixture until combined.
- Reserve about one-third of the mixture and press the remaining mixture into the prepared pan.
- In a small saucepan, combine the sweetened condensed milk, chocolate chips and remaining butter and place over medium-low heat. Stir constantly until melted and smooth. Remove from the heat and stir in the remaining 1 teaspoon of vanilla and 1/2 teaspoon salt. Spread the chocolate mixture over the oat mixture in the pan, then drop the remaining oat mixture by teaspoonfuls over the chocolate mixture.
- Bake in the preheated oven until golden, about 25 minutes. Let cool slightly before cutting into bars.
