Now, when I want a salad, I usually really want a salad. Something that will fill me up, but is still good for me.
Enter this Protein Packed Cobb Salad Recipe.
There is so much goodness going on here. Avocados, edamame, boiled eggs, bacon… And don’t forget the chicken breast that really adds some oomph to this Cobb salad recipe.
I could really eat this pretty much every day and be a happy girl. In fact, when I made this to photograph it, I ate it for two meals that day!! I can see this salad being devoured in my house all summer long!
Ingredients
- Chicken: The chicken in this recipe gets grilled, but feel free to cook it however you’d like. You can even use cooked, shredded chicken!
- Bacon: I like to use thick cut bacon for this recipe, but regular bacon will work, too.
- Greens: You can use all romaine lettuce, but I like to use mixed greens to get lots of flavors and textures in there.
- Kale: The kale adds even more nutrition, as well as flavor and texture.
- Eggs: Each portion will get one hard boiled egg.
- Tomatoes: I like to use grape tomatoes, but you can dice regular tomatoes if that is what you have on hand.
- Edamame: Edamame adds a lot of protein, and it tastes good, too! I buy it frozen at my grocery store and thaw it to use for this salad.
- Avocado: The avocado is optional, but adds great flavor.
- Blue Cheese: If you aren’t a blue cheese fan, you can add some shredded cheddar or another cheese of your choice.
- Dressing: For this salad, I used store bought ranch dressing, but homemade ranch dressing would be even better!
Tips and Tricks
Portions of this salad can be made ahead of time, and then just assemble the salad when you are ready to eat. You can grill the chicken, cook the bacon, and boil the eggs all in advance. You can even cut your vegetables, but I would store them separately so that they don’t get too soggy.
Add even more flavor by using this grilled chicken seasoning on the chicken.
Add even more protein by tossing some roasted chickpeas on top!
This salad is very customizable – add or take away according to your tastes.

Protein Packed Cobb Salad Recipe
Ingredients
- 2 (8 oz) each boneless, skinless chicken breasts
- 4 slices thick-cut bacon
- 8 cups mixed greens
- 4 cups chopped kale
- 4 boiled eggs sliced
- 1 cup grape tomatoes cut in half
- 1/2 cup edamame
- 1 avocado sliced
- 1/4 cup crumbled blue cheese
- 1/2 cup Ranch Salad Dressing
Instructions
- Cut each of the chicken breasts in half lengthwise, creating 4 thinner breast pieces. Season both sides with salt and pepper. Heat an indoor or outdoor grill to medium-high heat and grease the grates. Cook the chicken until it reaches 160ºF, flipping once. Remove and tent under foil and allow to rest.
- Dice the bacon, then add it to a medium skillet over medium heat. Cook until crisp, then remove with a slotted spoon to a paper towel lined plate.
- Slice each of the chicken breasts.
- To assemble the salads, combine the mixed greens and kale and divide between 4 large bowls. Top each with 1/4 of the chicken, bacon, tomatoes, edamame, 1 boiled egg and 1/4 of the avocado. Sprinkle each with 1 tablespoon of blue cheese, then drizzle each salad with 2 tablespoons of the Ranch Dressing. Serve immediately.

I loved my grandfather’s fresh crab salads. We always had them at Christmas with blue cheese dressing. He got the crab fresh off the docks and there’s nothing like it.
